Prep

Rice🌐

  • 1/2 c. Rice
  • 1 c. Water
  • Cook the rice according to package instructions. Store in the refrigerator.

Breakfast

Microwave Macaroni and Cheese in a Mug🌐

Total time: 10 min
Servings: 3
  • 1 c. Elbow Macaroni
  • 9/4 c. Water, cold
  • 12 tbsp. Milk
  • 3/2 tsp. Cornstarch
  • 12 tbsp. Shredded Chedder Cheese
  • In a large microwavable mug or large bowl add in the macaroni and the water. You need a large mug as the water will boil up.
  • Microwave for roughly 3 ½ minutes (1200w microwave). You want the pasta to be fully cooked.
  • Pour off the remaining cooking water.
  • Stir in the milk, cornstarch and shredded cheese and microwave for a final 60 seconds to create your sauce. Stir well, season with salt and pepper and enjoy.

Lunch

Digestive Apple Carrot Salad🌐

  • 2 Green Apples, peeled and coarsely chopped
  • 1 c. Baby Carrots
  • 1/2 Lemons, juiced
  • Use a box grater or food processor to finely shred the apples and carrots.
  • Drizzle with lemon juice.

Chicken with Lemon and Garlic🌐

For a variation on this dish, try using strips of turkey breast or pork fillet. They need slightly longer cooking. The whites of spring onions (scallions) can replace shallots, and the chopped green tops can be used instead of parsley.

  • 4 Boneless Skinless Chicken Breast Fillets
  • 4 Garlic Cloves, finely chopped
  • 2 Shallots, finely chopped
  • 2 tbsp. Olive Oil
  • 2 Lemons, juiced
  • 2 tsp. Paprika
  • 4 tbsp. Fresh Parsley, plus extra to serve
  • 1/4 tsp. Salt & Black Pepper
  • 2 Lemons, wedged, to serve
  • Remove the little fillet from the back of each breast portion. If the breast still looks fatter than a finger, bat it with a rolling pin to make it thinner. Slice all the chicken meat into strips.
  • Heat the oil in a large frying pan. Stir-fry the chicken strips with the shallot, garlic and paprika over a high heat for about 3 minutes until cooked through.
  • Add the lemon juice and parsley and season with salt and pepper to taste. Serve hot with lemon wedges, garnished with flat leaf parsley.

Egg & Mango Chutney Flatbreads🌐

From Jamie Oliver's 5 Ingredients

  • 4 Eggs
  • 3/4 c. Self-Rising Flour, plus extra for dusting
  • 6 tbsp. Regular Yogurt
  • 2 tbsp. Mango Chutney
  • 1 Fresh Red Chilies
  • Lower the eggs into a pan of vigorously simmering water and boil for 5½ minutes exactly, then refresh under cold water until cool enough to handle, and peel. Meanwhile, put a large non-stick frying pan on a medium-high heat. In a bowl, mix the flour with a little pinch of sea salt, 4 heaping tablespoons of yogurt, and 1 tablespoon of olive oil until you have a dough. Halve, then roll out each piece on a flour-dusted surface until just under ¼ inch thick. Cook for 3 minutes, or until golden, turning halfway.
  • Dot the mango chutney and remaining yogurt over the breads. Halve the soft-boiled eggs and arrange on top, smashing them in with a fork, if you like. Finely slice the chili and scatter over (as much as you dare!), drizzle with a little extra virgin olive oil, and season with salt and black pepper from a height.

Turkey Breakfast Sausage🌐

  • 1 lb. Ground Turkey
  • 2 tsp. Fennel Seeds, ground
  • 1/2 tsp. Garlic Powder
  • 1/4 tsp. Sea Salt & Black Pepper, to taste
  • 1 tbsp. Avocado Oil | Coconut Oil
  • In a medium-sized mixing bowl, combine and mix the first 4 ingredients (ground turkey through salt and pepper), and refrigerate for at least 30 minutes to firm the meat texture.
  • Once the mixture has been cooled, form into patties and place on a lined plate.
  • In a large skillet, heat oil on medium heat. Once oil is hot, add the patties. Cook for about five minutes per side, or until no longer pink in the middle.

Dinner

Chicken Salsa Roll-Ups🌐

  • 1/3 c. Red Tomatoes, chopped
  • 1/4 c. Red Onions, chopped
  • 1 tbsp. Apple Cider Vinegar
  • 1 tbsp. Fresh Cilantro, chopped
  • 1 Limes, juiced
  • 2 c. Boneless Skinless Chicken Breasts, cooked and sliced
  • 1/2 c. Fresh Spinach
  • 1 Avocados, peeled and sliced
  • 8 Leaves of Romaine Lettuce | Leaves of Butter Lettuce
  • Mix the first 5 ingredients in a bowl to make a salsa.
  • On a large serving platter, layer the sliced meat, spinach and avocado with the salsa.
  • Roll up each slice in a lettuce leaf and serve.

Escalopes of Veal with Cream Sauce🌐

If they are too thick, flatten the escalopes with a rolling pin. It'll help to cut down the cooking time.

Equipment: Stove
  • 1 tbsp. All-Purpose Flour
  • 4 Veal Escalopes
  • 2 tbsp. Sunflower Oil
  • 1 Shallots, chopped
  • 2 c. Oyster Mushrooms, sliced
  • 2 tbsp. Marsala Wine | Dry Sherry
  • 1 c. Crème Fraîche | Sour Cream
  • 2 tbsp. Fresh Tarragon, chopped
  • 1/4 tsp. Salt & Black Pepper
  • Season the flour and use to dust the veal, then set the meat aside.
  • Heat the oil in a large frying pan and cook the shallot and mushrooms for 5 minutes. Add the escallops and cook over a high heat for about 1(1/2) minutes on each side. Pour in the Marsala or sherry and cook until reduced by half.
  • Remove the escalopes from the pan. Stir in the crème fraîche, tarragon and seasoning into the juices in the pan and simmer gently for 3–5 minutes, or until the sauce it thick and creamy.
  • Return the escalopes to the pan and heat through for 1 minute before serving with the sauce, noodles and broccoli.

Honey Glazed Chicken🌐

Total time: 30 min
Servings: 2
  • 1 c. Rice, to serve
  • 2 Boneless Skinless Chicken Breasts
  • 1/4 c. Honey
  • 2 tbsp. Soy Sauce
  • 3/2 tsp. Olive Oil
  • 1/8 tsp. Crushed Red Pepper Flakes
  • 2 tbsp. Green Onions, sliced, to serve
  • Whisk honey, soy sauce, and red pepper flakes in a bowl; set aside.
  • Heat olive oil in a skillet over medium heat; cook and stir chicken in hot oil until lightly brown, about 5 minutes.
  • Pour honey mixture into the skillet; continue to cook and stir until chicken is no longer pink in the center and sauce is thickened, about 5 minutes more.
  • Serve hot on steamed rice and garnished with sliced green onions.

Green Beans with Almonds🌐

  • 1 lb. Green Beans
  • 2 tbsp. Avocado Oil
  • 2 Shallots, sliced thin
  • 1 Garlic Cloves, sliced thin
  • 1/2 Lemons, juiced
  • 1/4 tsp. Sea Salt & Black Pepper, to taste
  • 1/4 c. Sliced Almonds, sliced
  • In a large pot, add a steamer basket and 1-2 cups of water. Add the beans and steam until tender, about 5 minutes. Remove beans from the basket and set aside.
  • In a large skillet, over medium-high heat, add the avocado oil. Add the shallot and cook until translucent, about 3 minutes.
  • Add the garlic and cook until fragrant, stirring constantly to ensure it doesn't burn, about 30 seconds.
  • Add the beans back to the skillet, and stir until warm, about 2 minutes.
  • Add the lemon juice, salt and pepper, and then top with the sliced almonds. Add the green beans and sauté until warmed through, about 1-2 minutes.

Island Salad🌐

From Jamie Oliver's 5 Ingredients Mediterranean

Equipment: Oven & Stove
  • 1 English Cucumbers
  • 2 Loaves of Pita
  • 15 oz. Canned Sliced Peaches, in juice
  • 4 oz. Mixed Salad Leaves
  • 2 oz. Halloumi Cheese
  • 1 tbsp. Red Wine Vinegar
  • 1 tbsp. Extra Virgin Olive Oil
  • 1/8 tsp. Sea Salt & Black Pepper
  • Using a vegetable peeler, peel the cucumber lengthways into long delicate ribbons, discarding the seedy core, and place in a bowl with a pinch of sea salt and black pepper, and 1 tablespoon each of red wine vinegar and extra virgin olive oil.
  • Toast the pitas until golden, then slice into strips and arrange around the edges of two plates.
  • Place a large non-stick frying pan on a high heat. Drain and roughly chop the peaches (reserving the juice), then place in the pan with a good splash of the reserved juice, and season with pepper. Warm through for a few minutes while you toss the salad leaves with the dressed cucumber, and plate up.
  • Remove the peaches to a bowl, give the pan a quick wipe with a ball of paper towel, then use the fine side of a box grater to grate half the halloumi over the surface of the pan. Leave on the heat for 1 to 2 minutes, or until golden on one side, then tip directly over one of the plates, using a spatula to each it away from the pan, if needed. Repeat with the remaining halloumi for the second plate. Spoon over the peaches, and tuck straight in.
