Spicy Potato and Olive Salad

  • 8 Large New Potatoes
  • 1/4 tsp. Salt
  • 1/4 tsp. Granulated Sugar
  • 3 Garlic Cloves, chopped
  • 1 tbsp. Vinegar
  • 1/4 tsp. Cumin
  • 1/8 tsp. Paprika | Cayenne Pepper, to taste
  • 3 tbsp. Extra Virgin Olive Oil
  • 2 tbsp. Fresh Cilantro, chopped
  • 2 oz. Black Olives
  • Chop the new potatoes into chunks. Put them in a pan, pour in water to cover and add the salt and sugar. Bring to the boil, then reduce the heat and boil gently for about 10 minutes, or until the potatoes are just tender. Drain well and leave in a colander to cool.
  • When cool enough to handle, slice the potato chunks and put them in a bowl.
  • Sprinkle the garlic, vinegar, cumin and cayenne or paprika over the salad. Drizzle with olive oil and sprinkle over coriander and olives.
