Lemon Energy Bites

Equipment: Food Processor & Refrigerator
- 1 c. Dates, pitted
- 1/2 c. Cashew Butter
- 1/2 c. Unsweetened Coconut Flakes, shredded
- 2 tbsp. Chia Seeds
- 1/2 tsp. Vanilla Extract, alcohol free
- 2 tbsp. Maple Syrup
- 1 Limes, zested and juiced
- 1/8 tsp. Sea Salt
- Add all the ingredients to a food processor, and pulse until all ingredients are blended and a thick dough forms, about 3–5 minutes.
- When the ingredients are well incorporated, remove the blade from the food processor so you can work with the dough.
- Form the dough into 1 tablespoon portions and roll between your hands to form balls.
- Refrigerate for at least 2 hours, then serve and enjoy!
