Lemon Energy Bites

Equipment: Food Processor & Refrigerator
  • 1 c. Dates, pitted
  • 1/2 c. Cashew Butter
  • 1/2 c. Unsweetened Coconut Flakes, shredded
  • 2 tbsp. Chia Seeds
  • 1/2 tsp. Vanilla Extract, alcohol free
  • 2 tbsp. Maple Syrup
  • 1 Limes, zested and juiced
  • 1/8 tsp. Sea Salt
  • Add all the ingredients to a food processor, and pulse until all ingredients are blended and a thick dough forms, about 3–5 minutes.
  • When the ingredients are well incorporated, remove the blade from the food processor so you can work with the dough.
  • Form the dough into 1 tablespoon portions and roll between your hands to form balls.
  • Refrigerate for at least 2 hours, then serve and enjoy!
