Cauliflower Rice (Mediterranean-Inspired)

  • 1 c. Cauliflower Rice
  • 1 tbsp. Olive Oil
  • 1/2 Onions, diced small
  • 1 Garlic Cloves, minced
  • 1/2 Lemons, juiced
  • 2 tsp. Fresh Oregano
  • 2 tsp. Fresh Parsley
  • 1/4 tsp. Sea Salt & Black Pepper, to taste
  • Heat a large skillet over medium heat and add the avocado oil.
  • Add the cauliflower rice and onion and cook for 5 minutes, or until desired texture is achieved.
  • Add the garlic, and cook for 1 minute, until fragrant.
  • Remove the rice from heat, and add the lemon juice through parsley. Stir well to combine.
  • Season to taste with salt and pepper.

  • 1 Cauliflower Heads
  • Remove the leaves and core from the cauliflower, and cut the head into 4 pieces.
  • Using a grater, on the medium grate side, grate the cauliflower chunks until no more remain.
