Cauliflower Rice (Mediterranean-Inspired)

- 1 c. Cauliflower Rice
- 1 tbsp. Olive Oil
- 1/2 Onions, diced small
- 1 Garlic Cloves, minced
- 1/2 Lemons, juiced
- 2 tsp. Fresh Oregano
- 2 tsp. Fresh Parsley
- 1/4 tsp. Sea Salt & Black Pepper, to taste
- Heat a large skillet over medium heat and add the avocado oil.
- Add the cauliflower rice and onion and cook for 5 minutes, or until desired texture is achieved.
- Add the garlic, and cook for 1 minute, until fragrant.
- Remove the rice from heat, and add the lemon juice through parsley. Stir well to combine.
- Season to taste with salt and pepper.

- 1 Cauliflower Heads
- Remove the leaves and core from the cauliflower, and cut the head into 4 pieces.
- Using a grater, on the medium grate side, grate the cauliflower chunks until no more remain.
