Quinoa Tabbouloeh

- 1 c. Cooked Quinoa
- 1 c. Fresh Parsley, chopped
- 1 tbsp. Fresh Mint Leaves, chopped
- 1/2 c. Tomatoes, finely diced
- 1 tbsp. Lemon Juice, plus more to taste
- 2 tbsp. Olive Oil
- 1/4 tsp. Salt & Black Pepper
- In a medium bowl, combine the quinoa, parsley, mint, tomato, lemon juice, and olive oil. Season with salt and pepper. Taste it and add a little more lemon juice if it needs it. Refrigerate the tabbouleh for 1 hour before serving.
