Creamy Garlic Mashed Potatoes

- 3 c. Yellow Potatoes, peeled, diced
- 1/8 tsp. Salt
- 3 Garlic Cloves, peeled
- 1/4 c. Heavy Cream
- 2 tbsp. Salted Butter
- 1/8 tsp. Black Pepper, ground
- In a medium bowl, add the potatoes with enough water to cover them. Add a pinch of salt. Bring to a boil over high heat and boil for 5 minutes. Add the whole cloves of garlic and continue to cook until the potatoes are tender, approximately 15 minutes.
- Drain the potatoes in a colander. Let them sit in the colander for at least 3 minutes to steam-dry.
- While the potatoes are sitting, put the cream and butter in the potato pot along with some salt and pepper. Heat the cream and butter just until the butter melts.
- Return the potatoes and garlic to the pot and mash with a potato masher until smooth. Taste the potatoes and season with a little more salt and pepper if needed.
