Egg Bites

- 1 Bell Peppers, chopped small
- 1/3 Yellow Onions, minced
- 2 Garlic Cloves, minced
- 1/2 c. Fresh Kale, chopped small
- 1/8 tsp. Sea Salt & Black Pepper . to taste
- 6 Eggs
- Preheat the oven to 350°F. Line 12 muffin tins with muffin liners.
- In a pan over medium heat, cook the bell pepper, onion, garlic and kale until softened, about 7 minutes.
- Add the pepper mixture to the bowl, then add 8 cracked eggs into the bowl, and mix to combine.
- Pour mixture into lined muffin tins, ¾ full, to allow room for the egg bite to puff.
- Bake for 30-35 minutes, until the middles are set and not jiggly.
