Egg Bites

  • 1 Bell Peppers, chopped small
  • 1/3 Yellow Onions, minced
  • 2 Garlic Cloves, minced
  • 1/2 c. Fresh Kale, chopped small
  • 1/8 tsp. Sea Salt & Black Pepper . to taste
  • 6 Eggs
  • Preheat the oven to 350°F. Line 12 muffin tins with muffin liners.
  • In a pan over medium heat, cook the bell pepper, onion, garlic and kale until softened, about 7 minutes.
  • Add the pepper mixture to the bowl, then add 8 cracked eggs into the bowl, and mix to combine.
  • Pour mixture into lined muffin tins, ¾ full, to allow room for the egg bite to puff.
  • Bake for 30-35 minutes, until the middles are set and not jiggly.
