Fettucine All'Alfredo

- 1/4 c. Butter
- 1 c. Heavy Cream
- 2/3 c. Parmesan Cheese, plus extra to serve
- 12 oz. Fettuccine Noodles
- 1/8 tsp. Salt & Black Pepper
- Melt the butter in a large pan. Add the cream and bring it to a boil. Simmer for 5 minutes, stirring constantly, then add the Parmesan, with salt and ground black pepper to taste, and turn off the heat under the pan.
- Cook the pasta in a large pan of lightly salted boiling water for about 3 minutes.
- Turn on the heat under the pan of cream to low, add the cooked pasta all at once and toss until it is coated in the sauce.
- Taste for seasoning and serve immediately, topped with extra Parmesan cheese.
