Yummy Chili
- 2 tbsp. Avocado Oil
- 1 White Onions, chopped
- 3 Garlic Cloves, chopped
- 2 Mixed-Color Bell Peppers, red/yellow, chopped
- 2 Boneless Skinless Chicken Breasts, diced into small pieces (OR 1LB GROUND BEEF/TURKEY)
- 2 tbsp. Cumin (GROUND CUMIN)
- 1 tbsp. Chili Powder
- 30 oz. Baked Beans (COOKED BEANS, KIDNEY, BLACK, NORTHERN WHITE, OR MIXTURE)
- 28 oz. Red Tomatoes (TOMATOES), with juice
- 1 tbsp. Balsamic Vinegar
- In a large pot, heat oil and sauté the onions, garlic and peppers for 10 minutes over medium heat.
- Optional: Add chicken or turkey and sauté for another 5 minutes.
- Add cumin and chili powder, and cook for 5 more minutes.
- Add beans, tomatoes, and their liquid, and balsamic vinegar. Cover and cook for another 15 minutes.
- Uncover and mix while cooking for another 10 minutes, making sure the mixture doesn't burn.
