Bacon and Blue Crostini
Bacon and Blue Crostini
- 1 Small Baguette, sliced into 1/4-inch thick slices
- 2 tbsp. Olive Oil
- 1/8 tsp. Salt & Black Pepper
- 4 Bacon Slices, diced
- 2 Fresh Bosc Pears, peeled and diced
- 2 tbsp. Water
- 1 tbsp. Granulated Sugar
- 1/2 c. Crumbled Blue Cheese, at room temperature
- Preheat the oven to 350°F.
- Arrange the baguette slices on a sheet pan and drizzle them with the olive oil. Season the bread with salt and pepper and bake for 10 to 12 minutes, until the bread is crisp.
- Warm a medium skillet over medium heat and add the bacon. Cook for about 5 minutes.
- Drain off all but 1 tablespoon of the bacon fat. Add the pears to the pan and cook for 2 minutes. Add the water and sugar and cook for 8 to 10 minutes, until the mixture is thick. Remove from the heat and let cool.
- Spread a thin layer of blue cheese on each of the crostini. Top the cheese with the cooled bacon and pear mixture and enjoy.
