Prep

Hard Boiled Eggs🌐

Total time: 12 min
Servings: 2
  • 2 Eggs
  • Place eggs in cold water, enough to cover the eggs by about an inch.
  • Bring the water up to a rolling boil using high heat. Then remove from heat.
  • Cover and let simmer for 10 minutes.
  • Rinse eggs under cold water until they are chilled. Serve.

Breakfast

First Watch BLTE🌐

From the First Watch cookbook.
Total time: 20 min
Servings: 2
  • 2 Hard Boiled Eggs (OVER HARD EGGS, p19)
  • 1 tbsp. Mayo
  • 2 Slices of Whole Grain Bread
  • 3 Smoked Bacon Slices
  • 2 oz. Monterey Jack Cheese (SLICES OF Monterey Jack Cheese)
  • 2 oz. Red Tomatoes (SLICES TOMATO)
  • 1 c. Spring Mix
  • Spread mayonnaise evenly on each slice of bread.
  • Place bacon on one slice of bread; top with eggs and 1 slice of cheese on top of the eggs.
  • On the other slice of bread, place tomato slices and the other slice of cheese on top of the tomato.
  • Add spring mix to the bacon-egg side, then close the sandwich.
  • Serve with lemon-dressed greens.

Lunch

Red, White & Green Salad🌐

  • 1/2 c. Cherry Tomatoes, cut in half
  • 1/2 Red Bell Peppers
  • 1/4 Red Onions, finely chopped
  • 1 Cucumbers, peeled and diced
  • 2 c. Cauliflower, chopped
  • 1 tbsp. Fresh Parsley, finely chopped
  • 1/4 c. Broccoli Sprouts, chopped
  • 1 Lemons, juiced
  • 2 tbsp. Extra Virgin Olive Oil
  • 1/8 tsp. Sea Salt & Black Pepper, to taste
  • In a large bowl, add the cherry tomatoes through the broccoli sprouts.
  • Mix the lemon juice and olive oil together and add to the bowl of veggies.
  • Season to taste with salt and pepper.
  • Enjoy fresh or chilled.

Tahini Carrot Slaw🌐

From Jamie Oliver's 5 Ingredients
Total time: 20 min
Servings: 4
Equipment: Stove & Mortar & Pestle
  • 2 tbsp. Raw Mixed Seeds
  • 1 Garlic Cloves
  • 1 Lemons
  • 8 oz. Large Mixed-Color Carrots
  • 2 Apples
  • 1/4 tsp. Salt & Black Pepper
  • Toast the seeds in a dry non-stick frying pan on a medium heat until lightly golden, tossing regularly, then remove.
  • Put three-quarters of the seeds into a pestle and mortar with a pinch of sea salt, and pound until fairly fine. Peel and add the garlic, then smash to a paste. Squeeze in the lemon juice, then muddle in 1 tablespoon of extra virgin olive oil and a tiny drebble of red wine vinegar to make a delicious tahini-style dressing.
  • Wash the carrots, then finely slice into matchsticks with a good knife or using the julienne cutter on a mandolin (use the guard!). Core and slice the apples the same way, then toss both with the tahini dressing. Taste, season to perfection with salt and black pepper, then scatter over the remaining seeds.

Dinner

Sticky Kickin' Wings🌐

Equipment: Stove
  • 1 tbsp. Light Sesame Seeds
  • 4 Chicken Wings
  • 2 tbsp. Teriyaki Sauce
  • 1 Fresh Red Chilies
  • 2 Green Onions
  • 1/2 tsp. Red Wine Vinegar
  • Toast the sesame seeds in a dry 8-inch non-stick frying pan on a medium heat until lightly golden, then remove to a plate. Still on the heat, sit the wings in the pan — they should fit snugly. Let them color for 1 minute on each side, then add the teriyaki and just cover the wings with water. Halve the chili lengthways and add to the pan. Simmer for 35 to 40 minutes, or until the chicken is tender and the sauce is nice and sticky, turning occasionally.
  • Add a splash of red wine vinegar to the pan and jiggle around to pick up the gnarly bits. Trim and finely slice the scallions, scatter them over the chicken with the toasted sesame seeds, and get stuck in.

Hoisin Chicken Lettuce Cups🌐

Just toss it all in a salad bowl if you prefer.

  • 1 Mangos
  • 2 tbsp. Hoisin Sauce
  • 2 Boneless Skinless Chicken Breasts
  • 1 Romaine Lettuce Heads, 10 oz
  • 1 c. Watercress Sprouts
  • Put a grill pan on high heat. Cut the two cheeks off the mango, slice each into three lengthways, then slice off the skin and discard. Dice all the flesh into ½-inch cubes. Scrunch the stone over a bowl, to extract any pulp and juice, mix with the hoisin to make a dressing, and divide between two little bowls.
  • Flatten the chicken breasts by pounding them with your fists until the fat end is the same thickness as the skinny end. Rub with 1 tablespoon of olive oil and a pinch of sea salt and black pepper. then grill for 2-3 minutes on each side, or until bar-marked and cooked through. Meanwhile, trim the lettuce, click the leaves apart, and divide between two plates, snipping the cress alongside.
  • Divide up the mango and the hoisin bowls. Slice chicken and arrange on the plates, then tuck in, using the lettuce cups as a receptable to hold everything.

Steak and Blue Cheese on Ciabatta🌐

Part-baked bread cooks in about 8 minutes in a hot oven, but if even that is too long, just warm a regular baked ciabatta or French stick.
Total time: 20 min
Servings: 2
Equipment: Oven & Stove
  • 1 Ciabatta Loaf, part-baked
  • 2 Ribeye Steaks
  • 1 tbsp. Olive Oil
  • 4 oz. Gorgonzola Cheese, sliced
  • 1/4 tsp. Salt & Black Pepper
  • Bake the ciabatta according to the instructions on the packet. Remove from the oven and leave to rest while you cook the steak.
  • Heat a griddle pan until hot. Brush the steaks with the olive oil and lay them on the griddle pan. Cook for 2–3 minutes on each side, depending on the thickness of the steaks.
  • Remove the steaks and set them aside to rest. Meanwhile, cut the load in half and split each half horizontally.
  • Cut the steaks in half lengthways, so each is only half as thick as before. Moisten the bread with the pan juices, then make into sandwiches using the steak and cheese. Season well and serve.

Cauliflower Rice🌐

To make the cauliflower rice more quickly, you can pulse the cauliflower in a food processor a few times instead of grating it. The pieces won't be as evenly sized, but it will save time.
Total time: 25 min
Servings: 4
  • 1 Cauliflower Heads, leaves and stem trimmed off
  • 1 tbsp. Olive Oil
  • 1/8 tsp. Salt & Black Pepper
  • 1 tbsp. Salted Butter
  • Grate the cauliflower on the large holes of a box grater into a large bowl.
  • Warm a large skillet with a lid over medium-high heat. Add the olive oil and cauliflower and cook for 3 to 4 minutes, until the cauliflower looks wet.
  • Cover the pan and remove it from the heat. Let the cauliflower sit for 10 minutes. Season it with salt and pepper, and add the butter. Fluff it with a fork and serve.

Beets🌐

Servings: 2
  • 4 Beets, peeled
  • 1/4 c. Fresh Parsley, chopped
  • 1 tbsp. Apple Cider Vinegar
  • 1/2 Lemons, juiced
  • 1/8 tsp. Sea Salt, to taste
  • Steam the beets for 15 minutes.
  • Set beets aside to cool down until cool enough to handle.
  • Dice beets and toss with parsley, apple cider vinegar, lemon juice and sea salt.
