Breakfast

Egg & Mango Chutney Flatbreads🌐

From Jamie Oliver's 5 Ingredients
Total time: 12 min
Servings: 2
  • 4 Eggs
  • 3/4 c. Self-Rising Flour, plus extra for dusting
  • 6 tbsp. Regular Yogurt
  • 2 tbsp. Mango Chutney
  • 1 Fresh Red Chilies
  • Lower the eggs into a pan of vigorously simmering water and boil for 5½ minutes exactly, then refresh under cold water until cool enough to handle, and peel. Meanwhile, put a large non-stick frying pan on a medium-high heat. In a bowl, mix the flour with a little pinch of sea salt, 4 heaping tablespoons of yogurt, and 1 tablespoon of olive oil until you have a dough. Halve, then roll out each piece on a flour-dusted surface until just under ¼ inch thick. Cook for 3 minutes, or until golden, turning halfway.
  • Dot the mango chutney and remaining yogurt over the breads. Halve the soft-boiled eggs and arrange on top, smashing them in with a fork, if you like. Finely slice the chili and scatter over (as much as you dare!), drizzle with a little extra virgin olive oil, and season with salt and black pepper from a height.

Lunch

Ginger Baked Salmon w/ Sautéed Greens🌐

Servings: 4
Equipment: Oven & Stove
  • 4 Wild Salmon
  • 2 tbsp. Coconut Oil
  • 1 tbsp. Ground Ginger
  • 1/4 tsp. Sea Salt & Black Pepper, to taste
  • 4 c. Mixed Baby Greens, spinach, chard, kale, arugula, etc
  • 2 tbsp. Coconut Aminos
  • 2 tbsp. Lemon Juice
  • 1 tbsp. Garlic Cloves, minced
  • 1 Lemons, wedged, for garnish
  • Preheat the oven to 400°F.
  • Line a large baking sheet with parchment paper.
  • Season the salmon with sea salt, pepper and 1 tablespoon of coconut oil, melted. Top with ground ginger.
  • Place fillets on the lined baking sheet, place in the oven, and bake for 15 minutes, or until the fish is cooked through and flakes easily with a fork.
  • While the salmon is baking, heat a large skillet over medium-high heat, add the remaining coconut oil, and add the greens.
  • Add the coconut aminos, lemon juice and minced garlic. Season to taste with salt and pepper. Cook for about 7–10 minutes, stirring regularly.
  • Remove the salmon from the oven, and set aside. Season the greens with salt and pepper, and divide among four plates.
  • Top the greens with salmon fillets, and a wedge of lemon.

Greek Salmon🌐

  • 8 oz. Wild Salmon
  • 1/2 tsp. Sea Salt & Black Pepper, to taste
  • 2 tsp. Dried Basil
  • 2 Lemons, juiced
  • Preheat the oven to 350°F.
  • Season the salmon with sea salt, pepper, basil and lemon.
  • Place in the oven and bake for 30 minutes.

Naked Salad Tunisienne🌐

From Jamie Oliver's 5 Ingredients Mediterranean
Total time: 18 min
Servings: 4
  • 1 Small Red Onions
  • 2 Fresh Plum Tomatoes
  • 1 Green Apples
  • 1 English Cucumbers
  • 1 oz. Fresh Mint Leaves
  • 3 tbsp. Extra Virgin Olive Oil
  • 2 tbsp. Red Wine Vinegar
  • 1/8 tsp. Sea Salt & Black Pepper
  • Peel the onion, quarter and seed the tomatoes, core the apple and trim the cucumber, then take care to very finely dice everything.
  • Pick the baby mint leaves and reserve for garnish, then very finely chop the rest, discarding the stems.
  • Dress everything with 3 tablespoons of extra virgin olive oil and 2 tablespoons of red wine vinegar, then season to perfection with sea salt and black pepper and scatter over the reserved mint leaves. Great served with warm flatbreads.

Dinner

Pan-Seared Steak w/ Whiskey Sauce🌐

Total time: 30 min
Servings: 2
  • 2 Sirloin Steaks
  • 1/8 tsp. Salt & Black Pepper
  • 1 tbsp. Olive Oil
  • 1/4 c. Whiskey
  • 1/2 c. Beef Stock
  • 2 tbsp. Heavy Cream
  • 1 tsp. Dijon Mustard
  • Warm a medium skillet over medium-high heat. Season the steaks with salt and pepper. Add the oil and steaks to the pan and cook for 4 minutes per side. Take the steaks out of the pan and set aside to rest for 5 minutes.
  • Drain the fat out of the pan and pour in the whiskey. Cook the whiskey for about 30 seconds to cook off the alcohol. Add the beef stock, increase the heat to high, and bring to a boil. Boil the stock for about 3 minutes, or until reduced by half. Add the cream and cook for another 2 minutes.
  • Remove from the heat and stir in the mustard. Taste the sauce and season with salt and pepper as needed.
  • Pour any juices that have accumulated around the steaks into the sauce, stir, then pour the sauce over the steaks and serve.

Sides

Steamed Asparagus🌐

Total time: 10 min
Servings: 4 oz.
Equipment: Stove
  • 1/2 c. Asparagus Spears
  • Bring a pot of water to a boil. Trim off the woody ends of the asparagus.
  • Set a steaming basket above the boiling water and lay the asparagus in the basket. Cover the pot and steaming basket with a lid. Steam for 7 minutes.

Beets🌐

Servings: 2
Equipment: Stove
  • 4 Beets, peeled
  • 1/4 c. Fresh Parsley, chopped
  • 1 tbsp. Apple Cider Vinegar
  • 1/2 Lemons, juiced
  • 1/8 tsp. Sea Salt, to taste
  • Steam the beets for 15 minutes.
  • Set beets aside to cool down until cool enough to handle.
  • Dice beets and toss with parsley, apple cider vinegar, lemon juice and sea salt.

Snacks

Coconut Yogurt and Chocolate Almonds🌐

Total time: 5 min
Servings: 2
  • 1 c. Coconut Yogurt
  • 1 tbsp. Sliced Almonds
  • 1 tbsp. Dark Chocolate Chips (70%)
  • Combine all three. Serve and enjoy.

Apricot Butter Bars🌐

Store in an airtight container. The cook time may vary depending on the model of dehydrator you use.
Total time: 130 min
Servings: 5
  • 1 tbsp. Chia Seeds
  • 3 tbsp. Nut Butter | Seed Butter, unsweetened
  • 1/2 c. Dried Figs
  • 3/2 c. Dried Apricots
  • 3 tbsp. Coconut Flakes, dried
  • 1 c. Granola | Muesli
  • Add the ingredients to a food processor and combine well until a ball of thick paste is formed
  • Scoop the ingredients out onto a large piece of baking paper
  • Cover the mixture with the excess paper and flatten slightly
  • Roll out with a rolling pin until the mixture forms a flat slab about 1.5 cm thick
  • Dehydrate for approximately 12 hours at 125 degrees.
  • If you do not have a dehydrator you could either set these bars in the fridge, or cook them at the ovens lowest temperature for a day. If you are storing them in the fridge rather than dehydrating them they will be a little sticky. Dehydrating them removes the moisture and makes them easier to store and eat.
