  • 2 Eggs
  • Place eggs in cold water, enough to cover the eggs by about an inch.
  • Bring the water up to a rolling boil using high heat. Then remove from heat.
  • Cover and let simmer for 10 minutes.
  • Rinse eggs under cold water until they are chilled. Serve.

Maple Syrup & Balsamic Dressing🌐

  • 1 tbsp. Avocado Oil
  • 1 tbsp. Balsamic Vinegar

  • In a medium bowl, whisk together the avocado oil through the thyme. Add salt and pepper, to taste.

  • Rinse the rice in hot water until it blooms and the water runs clear.
  • Cook the rice according to package instructions. Store in the refrigerator.

Pan Roasted Vegetables 🌐

  • 1/2 c. Fresh Zucchini, diced
  • 12 Cherry Tomatoes
  • 1/2 c. Red Bell Peppers, diced
  • 1/2 c. Red Onions, diced

  • 1 tbsp. Olive Oil
  • 1/8 tsp. Salt & Black Pepper
  • Preheat the oven to 400°F. Line a sheet pan with parchment paper.
  • In a large bowl, combine the zucchini, tomatoes, bell pepper, onion, and sweet potato. Add the olive oil and season with salt and pepper. Stir or toss to mix evenly.
  • Spread the vegetables out on the lines sheet pan. Roast them in the oven for 12 minutes, flip them over, and continue roasting for 15–20 minutes longer, until they're tender.

Breakfast

Linguine w/ Avocado, Tomato, & Lime🌐

  • 4 oz. Linguine
  • 1 Limes, zested and juiced
  • 1 Avocados, stoned, peeled, and chopped
  • 1 Red Tomatoes, chopped
  • 1/4 c. Fresh Cilantro, chopped
  • 1/4 Red Onions, finely chopped
  • 1/2 Fresh Red Chilies, deseeded and finely chopped
  • Cook the pasta according to pack instructions – about 10 mins. Meanwhile, put the lime juice and zest in a medium bowl with the avocado, tomatoes, coriander, onion and chilli, if using, and mix well.
  • Drain the pasta, toss into the bowl and mix well. Serve straight away while still warm, or cold.

Probiotic Salad🌐

  • Dice the tomatoes, and chop the avocado and hard boiled eggs. Combine them in a large bowl.
  • Add the coconut yogurt and the sauerkraut. Toss and serve.

Lunch

Pasta Primavera🌐

Any kind of fresh vegetable can be added to this pasta.
Total time: 20 min

Equipment: Stove
  • 4 oz. Penne Pasta, 1⅓ cups
  • 1 tsp. Olive Oil
  • 1/2 c. Red Bell Peppers, sliced
  • 1/2 c. Broccoli Florets
  • 1 tbsp. Garlic, chopped
  • 1 c. Pasta Sauce w/ Mushrooms
  • 1/8 tsp. Salt & Pepper
  • Cook the pasta according to the package directions.
  • While the pasta is cooking, warm a medium skillet over medium-high heat. Add the olive oil, bell peppers, and broccoli and cook for 5 minutes, stirring every minute or so, until the vegetables begin to soften.
  • Add the garlic to the pan and cook for 45 seconds to 1 minute, just until it starts to turn golden brown. Add the mushroom ragù sauce. Cook for 5–6 minutes, until the sauce is hot, and the vegetables are tender. You may need to stir a few tablespoons of the pasta cooking water into the sauce if it starts to get too thick.
  • Toss the pasta into the sauce, season with salt and pepper, and serve.

Roasted Brussels Sprouts Salad w/ Maple Syrup Balsamic Dressing🌐

  • 1/4 c. Maple Syrup & Balsamic Dressing
  • 1/2 lb. Brussel Sprouts, halved
  • 2 Orange Sweet Potatoes, chopped
  • 1 Onions, thinly sliced
  • 1/2 tsp. Garlic Powder
  • 1/2 tsp. Onion Powder
  • 1/4 tsp. Sea Salt & Black Pepper, to taste
  • 2 tbsp. Olive Oil
  • 1/4 tsp. Black Pepper
  • 1/3 c. Dried Cranberries
  • 1/4 c. Black Walnuts, chopped
  • Preheat the oven to 425°F.
  • In a large bowl, add the Brussels sprouts through olive oil, and toss to coat.
  • Arrange the Brussels sprouts mixture on a lined baking sheet, and bake in the oven for 15 minutes. Toss the veggies, and bake another 10–15 minutes, until tender.
  • When the veggies are done, remove from the oven and sprinkle with additional black pepper, the dried cranberries, and chopped walnuts. Drizzle with the Maple Syrup Balsamic dressing and enjoy!

Chicken Noodle Stir-Fry🌐

From Jamie Oliver's 5 Ingredients

  • 1 oz. Unsalted Peanuts
  • 2 Boneless Skinless Chicken Breasts
  • 2 tbsp. Black Bean Sauce
  • 5 oz. Unenriched Medium Egg Noodles
  • 7 oz. Broccolini Heads
  • 1 tbsp. Olive Oil
  • 1 tbsp. Red Wine Vinegar
  • 1 tsp. Extra Virgin Olive Oil, to taste
  • Place a large non-stick frying pan on a medium heat and toast the peanuts as it heats up, tossing regularly, then remove and set aside, leaving the pan on the heat.
  • Meanwhile, score the chicken lengthways at ½-inch intervals, going about halfway through. In a bowl, toss the chicken with 1 tablespoon each of olive oil, red wine vinegar, and black bean sauce to coat. Cook in the hot pan for 3 minutes on each side, or until dark, gnarly, and cooked through.
  • Cook the noodles in a large pan of boiling salted water according to the package instructions. Trim the broccolini (halving any thick stalks lengthways) and add to the water for the last 2 minutes.
  • Remove the chicken to a board. Use tongs to carefully drag the just-cooked noodles and broccolini with a bit of their water straight into the frying pan.
  • Pound half the peanuts in a pestle and mortar until fine, toss into the pan with the remaining black bean sauce until well mixed, then divide between your plates.
  • Slice the chicken and place on top, scatter over the remaining peanuts, drizzle with a little extra virgin olive oil, and dig in.

Tahini Carrot Slaw🌐

From Jamie Oliver's 5 Ingredients

  • 1 tbsp. Raw Mixed Seeds
  • 1/2 Garlic Cloves
  • 1/2 Lemons
  • 4 oz. Large Mixed-Color Carrots
  • 1 Apples
  • 1/8 tsp. Salt & Black Pepper
  • Toast the seeds in a dry non-stick frying pan on a medium heat until lightly golden, tossing regularly, then remove.
  • Put three-quarters of the seeds into a pestle and mortar with a pinch of sea salt, and pound until fairly fine. Peel and add the garlic, then smash to a paste. Squeeze in the lemon juice, then muddle in 1 tablespoon of extra virgin olive oil and a tiny drebble of red wine vinegar to make a delicious tahini-style dressing.
  • Wash the carrots, then finely slice into matchsticks with a good knife or using the julienne cutter on a mandolin (use the guard!). Core and slice the apples the same way, then toss both with the tahini dressing. Taste, season to perfection with salt and black pepper, then scatter over the remaining seeds.

Fruit Salad🌐

  • 1 tbsp. Maple Syrup
  • 2 c. Fresh Blueberries
  • 2 c. Watermelon, diced
  • 1 c. Yambean (Jicama), diced
  • 1 Limes, juiced
  • 3/2 tbsp. Honey
  • 1 tbsp. Fresh Mint Leaves, minced
  • Place strawberries in a large bowl and toss to coat in the maple syrup.
  • Add blueberries, watermelon, and jicama to the bowl.
  • In a small bowl, stir together lime juice, honey and mint. Pour over fruit and toss to coat.

Dinner

Chickpea and Turmeric Rice Bowls🌐

Total time: 70 min
Servings: 4
  • 1/2 Red Onions
  • 1/2 c. Apple Cider Vinegar
  • 2 tsp. Coconut Oil
  • 1 c. Brown Rice
  • 7/4 tsp. Turmeric Powder
  • 1 tsp. Ground Cumin
  • 2 Bay Leaves
  • 1/4 c. Tahini (Sesame Seed Paste)
  • 4 c. Fresh Spinach
  • 2 c. Canned Chickpeas
  • Peel and thinly slice onion. In a small bowl, whisk together apple cider vinegar, sugar (optional), and a pinch of salt. Add onion and set aside to pickle.
  • Heat coconut oil in a pot over medium-low heat. Add rice and roast 2 minutes. Add turmeric, cumin, bay leaf, and a pinch of salt. Toast 30 seconds more, then add 2⅔ cups water. Cover and simmer until rice is tender, 20–30 minutes.
  • Meanwhile, in a small bowl, whisk together tahini and an equal amount of water. Season with salt and pepper to taste.
  • When rice is done, remove bay leaves and add spinach. Cover and let steam until spinach is wilted. Divide into bowls.
  • Top bowls with drained chickpeas and pickled onions. Drizzle with tahini.

Edamame & Veggie Rice Bowl🌐

  • 1/2 c. Rice
  • 1 c. Pan Roasted Vegetables
  • 1/4 c. Frozen Edamame Beans
  • 2 tbsp. Fresh Cilantro, chopped
  • 1/4 c. Avocados, diced
  • 2 tbsp. Green Onions
  • 2 tbsp. Citrus-Lime Vinaigrette
  • Arrange rice, veggies, edamame and avocado in a 4-cup sealable container or bowl.
  • Top with scallions and cilantro. Drizzle with vinaigrette just before serving.

Pan-Fried Haddock🌐

  • 1 tbsp. Olive Oil
  • 4 Garlic Cloves, finely chopped
  • 4 tbsp. Capers
  • 4 Skinless Haddock Tenderloin Fillets, 6-ounces each
  • 2 Lemons, juiced and zested
  • 1/4 tsp. Sea Salt & Black Pepper, to taste
  • 4 c. Mixed Baby Greens
  • 2 tbsp. Olive Oil
  • 2 tbsp. Balsamic Vinegar
  • In a large skillet over medium-high heat, heat oil, garlic and capers. Cook until the garlic becomes fragrant, about 3 minutes.
  • Add the fish and lemon zest, and cook each side for 5 minutes until it browns and is cooked throughout. Drizzle with fresh lemon juice on top, season to taste with salt and pepper, and serve with cooked capers and garlic.
  • Serve alongside mixed greens, olive oil, and balsamic vinegar.

  • 1 tbsp. Olive Oil
  • 1/2 c. Onions, diced
  • 1 tbsp. Fresh Ginger, grated
  • 1 tbsp. Tomato Paste
  • 1 tbsp. Curry Powder
  • 1/2 c. Raw Red Lentils, rinsed
  • 3 c. Water
  • 1/8 tsp. Salt & Black Pepper
  • Warm a medium pot over medium heat. Add the olive oil and onion and cook for 5 minutes, or until soft. Add the ginger and cook for 30 seconds. Add the tomato paste and cook for 1 minute.
  • Sprinkle the curry powder into the pot and cook for 30 seconds. Add the lentils and water and bring to a boil. Reduce the heat to low and simmer for 25–30 minutes, until the lentils are tender.
  • Taste the dal and add salt and pepper if it needs it.

Honey-Lime Roasted Carrots🌐

  • 1 lb. Carrots

  • 1 tbsp. Fresh Dill, chopped
  • Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  • Slice the carrots lengthwise and set aside.
  • In a large bowl, combine the olive oil through the dill.
  • Add the carrot slices and toss to combine.
  • Pour the tossed carrots onto the lined baking sheet, in a single layer, and bake for 25–30 minutes, or until tender.

Roasted Zucchini🌐

  • 1 Fresh Zucchini

  • Preheat the oven to 425°F.
