Whipped Eggs

- 2 Eggs
- This preparation works great for omelets and frittatas. Use a whisk or hand blender to mix cracked eggs in a bowl until frothy. You can mix ahead of time and store in an airtight container and refrigerate, but the best way is to whip just before adding them to the pan. This will guarantee that the air you just shipped in will result in a nice, fluffy finished product.
- If cooking the eggs, add whipped eggs to a buttered, nonstick, non-heated pan and cook over medium low heat. Work with a rubber spatula by pushing and pulling the edges to create big ridges. When eggs are cooked, finish folded or open-faced.
