Bacon and Blue Crostini

  • 1 Small Baguette, sliced into 1/4-inch thick slices
  • 2 tbsp. Olive Oil
  • 1/8 tsp. Salt & Black Pepper
  • 4 Bacon Slices, diced
  • 2 Fresh Bosc Pears, peeled and diced
  • 2 tbsp. Water
  • 1 tbsp. Granulated Sugar
  • 1/2 c. Crumbled Blue Cheese, at room temperature
  • Preheat the oven to 350°F.
  • Arrange the baguette slices on a sheet pan and drizzle them with the olive oil. Season the bread with salt and pepper and bake for 10 to 12 minutes, until the bread is crisp.
  • Warm a medium skillet over medium heat and add the bacon. Cook for about 5 minutes.
  • Drain off all but 1 tablespoon of the bacon fat. Add the pears to the pan and cook for 2 minutes. Add the water and sugar and cook for 8 to 10 minutes, until the mixture is thick. Remove from the heat and let cool.
  • Spread a thin layer of blue cheese on each of the crostini. Top the cheese with the cooled bacon and pear mixture and enjoy.
