Sautéed Chicken & Garlic Cauliflower Mash

  • 1 c. Cauliflower Mash
  • 1 tbsp. Coconut Oil
  • 1 lb. Boneless Skinless Chicken Thighs
  • 1/4 tsp. Sea Salt & Black Pepper, to taste
  • 1 Lemons, zested
  • 1 tsp. Fresh Thyme, chopped
  • In a large skillet over medium heat, heat the coconut oil.
  • To the skillet, add the chicken, lemon zest, thyme, and salt & pepper. Cook for 5-10 minutes, until the chicken is cooked through.
  • Serve with cauliflower mash.

Cauliflower Mash🌐

  • 1 Cauliflower Heads
  • 1 tbsp. Coconut Oil
  • 2 tbsp. Broth | Water, organic
  • 1/4 tsp. Sea Salt, to taste
  • 1 tbsp. Dill | Chives, chopped
  • Lightly steam the cauliflower.
  • Add all ingredients to a blender and mix on high.
  • Top with chopped dill/chives.
