Prep

Hard Boiled Eggs🌐

Total time: 12 min
Servings: 4
  • 4 Eggs
  • Place eggs in cold water, enough to cover the eggs by about an inch.
  • Bring the water up to a rolling boil using high heat. Then remove from heat.
  • Cover and let simmer for 10 minutes.
  • Rinse eggs under cold water until they are chilled. Serve.

Breakfast

Egg Sandwich🌐

Total time: 20 min
Servings: 2
  • 4 Hard Boiled Eggs
  • 2 tbsp. Mayo, for filling
  • 1 tsp. Dijon Mustard, for filling
  • 1 tsp. Chives | Green Onions, finely chopped, for filling
  • 1/4 tsp. Black Pepper, for filling
  • 1/8 tsp. Kosher Salt, for filling
  • 4 Slices of Bread
  • 1/2 tsp. Butter, for bread
  • 4 Leaves of Lettuce
  • Place the eggs in a bowl and mash with a fork. Smaller egg white bits make a creamier filling.
  • Add remaining filling ingredients and gently stir to combine.
  • Butter the bread and top each slice with a lettuce lead. Divide the filling between 4 pieces of bread and spread evenly edge to edge.

Turkey Breakfast Sausage🌐

Servings: 4
  • 1 lb. Ground Turkey
  • 2 tsp. Fennel Seeds, ground
  • 1/2 tsp. Garlic Powder
  • 1/4 tsp. Sea Salt & Black Pepper, to taste
  • 1 tbsp. Avocado Oil | Coconut Oil
  • In a medium-sized mixing bowl, combine and mix the first 4 ingredients (ground turkey through salt and pepper), and refrigerate for at least 30 minutes to firm the meat texture.
  • Once the mixture has been cooled, form into patties and place on a lined plate.
  • In a large skillet, heat oil on medium heat. Once oil is hot, add the patties. Cook for about five minutes per side, or until no longer pink in the middle.

Lunch

Pork with Cream and Apple Sauce🌐

Serve with red cabbage or fried polenta.

Servings: 4
  • 4 Pork Tenderloin Fillets
  • 2 tbsp. All-Purpose Flour
  • 2 tbsp. Butter
  • 4 Baby Leeks, finely sliced
  • 1 tsp. Mustard Seeds, coarsely crushed
  • 2/3 c. Dry White Wine
  • 2 Apples
  • 2/3 c. Double Cream
  • 2 tbsp. Fresh Parsley, chopped
  • 1/8 tsp. Salt & Black Pepper
  • Place the flour in a bowl and add plenty of seasoning. Turn the pork in the flour mixture to coat them lightly.
  • Melt the butter in a heavy frying pan and cook the pork for 1 minute on each side.
  • Add the sliced leeks to the pan and cook for 3 minutes. Stir in the mustard seeds. Pour in the wine. Cook gently for 10 minutes, turning the pork occasionally. Peel, core and slice the apples.
  • Add the sliced apples and double cream and simmer for 3 minutes, or until the pork is fully cooked and the sauce is thick, rich and creamy. Taste for seasoning, then stir in the chopped parsley and serve at once.

Beef, Beets, & Horseradish🌐

From Jamie Oliver's 5 Ingredients

Servings: 4
  • 11 oz. Mixed-Color Baby Beets
  • 6 tbsp. Creamy Horseradish
  • 6 tsp. Reduced-Fat Crème Fraîche
  • 7/2 oz. Watercress
  • 3 oz. Bresaola
  • Scrub the beets clean, reserving any nice leaves, then finely slice into matchsticks with good knife skills or using the julienne cutter on a mandolin (use the guard!). Dress with ½ a tablespoon each of extra virgin olive oil and red wine vinegar, the horseradish, and crème fraîche, then season to perfection with sea salt and black pepper. Delicately toss with the watercress and any reserved beet leaves.
  • Divide up the bresaola between your plates, followed by the beet salad, then drizzle with 1 teaspoon of extra virgin olive oil, and serve.

Hot Oatmeal🌐

  • 2 Package Oatmeal
  • 1/2 c. Hot Water
  • Pour the hot water over the Oatmeal. Enjoy!

Dinner

Chicken Quesadillas🌐

  • 4 Tortillas
  • 4 oz. Mozzarella Cheese
  • 2 oz. Grilled Chicken Breast
  • 1 oz. Salsa
  • Cook the quesadilla and serve warm.

Stuffed Sweet Peppers🌐

Use red or orange (bell) peppers if you prefer, or a combination of the two.
Total time: 20 min
Servings: 4
Equipment: Mortar & Pestle & Food Processor
  • 4 Yellow Bell Peppers, halved lengthways and seeded
  • 3 Garlic Cloves, finely chopped
  • 2 Fresh Cilantro roots, finely chopped
  • 1 Eggs, lightly beaten
  • 3 c. Mushrooms, quartered
  • 1 tbsp. Light Soy Sauce
  • 1/2 tsp. Granulated Sugar
  • 3 Kaffir Lime Leaves, finely chopped
  • 1 tsp. Thai Red Curry Paste
  • In a mortar or spice grinder pound or blend the garlic with the coriander roots. Scrape into a bowl.
  • Put the mushrooms in a food processor and pulse briefly until they are finely chopped. Add to the garlic mixture, then stir in the curry paste, egg, sauces, sugar and lime leaves.
  • Place the pepper halves in a single layer in a steamer basket. Spoon the mixture loosely into the pepper halves.
  • Bring the water in the steamer to the boil, then lower the heat to a simmer. Steam until the flesh feels tender when tested with a knife tip. Serve hot.

Sticky Kickin' Wings🌐

From Jamie Oliver's 5 Ingredients
Total time: 45 min
Servings: 2
Equipment: Stove
  • 1 tbsp. Light Sesame Seeds
  • 4 Chicken Wings
  • 2 tbsp. Teriyaki Sauce
  • 1 Fresh Red Chilies
  • 2 Green Onions
  • 1/2 tsp. Red Wine Vinegar
  • Toast the sesame seeds in a dry 8-inch non-stick frying pan on a medium heat until lightly golden, then remove to a plate. Still on the heat, sit the wings in the pan — they should fit snugly. Let them color for 1 minute on each side, then add the teriyaki and just cover the wings with water. Halve the chili lengthways and add to the pan. Simmer for 35 to 40 minutes, or until the chicken is tender and the sauce is nice and sticky, turning occasionally.
  • Add a splash of red wine vinegar to the pan and jiggle around to pick up the gnarly bits. Trim and finely slice the scallions, scatter them over the chicken with the toasted sesame seeds, and get stuck in.

Rainbow Stir-Fry Veggies🌐

  • 1 tbsp. Coconut Oil
  • 1/2 c. Cherry Tomatoes | Red Bell Peppers
  • 1 Orange Bell Peppers | Orange Sweet Potatoes, diced
  • 1 c. Pineapple | Yellow Bell Peppers, diced
  • 2 Fresh Zucchini, diced
  • 1/2 Purple Cabbage, chopped
  • 2 Purple Sweet Potatoes, diced small
  • 1/4 tsp. Sea Salt & Black Pepper, to taste
  • In a wok (or large skillet), turn the heat to medium-high and add the coconut oil.
  • When melted, add the tomatoes through cabbage, and cook until softened, about 5 minutes.
  • Add the sweet potato and continue to cook until cooked through, about 15-20 minutes.
  • Season with salt and pepper.

Beets🌐

  • 4 Beets, peeled
  • 1/4 c. Fresh Parsley, chopped
  • 1 tbsp. Apple Cider Vinegar
  • 1/2 Lemons, juiced
  • 1/8 tsp. Sea Salt, to taste
  • Steam the beets for 15 minutes.
  • Set beets aside to cool down until cool enough to handle.
  • Dice beets and toss with parsley, apple cider vinegar, lemon juice and sea salt.

Sweet Corn with Maple-Bourbon Brown Butter and Bacon🌐

Total time: 15 min
Servings: 4
  • 4 Maple-Glazed Bacon Slices, chopped
  • 3 tbsp. Challenge Butter
  • 3 Ear of Sweet Corn, kernels cut off cob (about 4 cups)
  • 2 Spring Onions, chopped
  • 2 tbsp. Bourbon
  • 3/2 tsp. Maple Syrup, real
  • 1/2 tsp. Salt & Black Pepper
  • Add bacon to a large skillet over medium heat. Cook until crispy then remove to a paper towel-lined plate to drain and set aside. Remove bacon grease from skillet.
  • Melt butter in skillet then, when it begins to foam, start swirling skillet until the butter reaches caramel brown in color.
  • Add sweet corn, green onions, bourbon, maple syrup, salt, and pepper then turn the heat up slightly and toss to combine. Saute for 7-8 minutes or until corn is tender and caramelized, stirring every so often.
  • Add bacon back in then taste and adjust salt and pepper if necessary.

Snacks

Frothy Hot Chocolate🌐

You could use Mexican chocolate, which is flavoured with almonds, cinnamon and vanilla, and sweetened with sugar. All the ingredients are crushed together in a special mortar, and heated over coals. The powdered mixture is then shaped into discs, which can be bought in specialist stores.
Total time: 7 min
Servings: 4
  • 4 c. Milk
  • 1 Vanilla Bean
  • 3 oz. Dark Chocolate Bar (70%), grated
  • Pour the milk into a pan, split the vanilla pod lengthways using a sharp knife to reveal the seeds, and add it to the milk; the vanilla seeds and the pod will flavour the milk.
  • Add the chocolate. The amount to use depends on personal taste - start with a smaller amount if you are unsure of the flavour and taste it at the beginning of step 3, adding more if necessary.
  • Heat the chocolate milk gently, stirring until all the chocolate has melted and the mixture is smooth, then whisk with a wire whisk until the mixture boils.
  • Remove the vanilla pod from the pan and divide the drink among four mugs or heatproof glasses. Serve the hot chocolate immediately.
