Shopping List

Prep

Stovetop Chickpeas🌐

Total time: 180 min
Servings: 2 c.
Equipment: Stove
  • 1 c. Chickpeas
  • 1 tsp. Baking Soda
  • 1/2 tsp. Kosher Salt
  • 2 Bay Leaves
  • 1 Garlic Cloves, lightly smashed
  • Soak the chickpeas. You can either soak them overnight or try the quick soaking method.
  • - To soak overnight, put the chickpeas in a large bowl and add plenty of water to cover the chickpeas by a good 3 inches. Set aside for 24 hours.
  • - For the quick soak method, put the chickpeas in a pot and add 6 cups of water. Bring to a boil and cook for 2 minute. Turn the heat off, cover and let the chickpeas soak for 1 hour.
  • Drain. In a large cooking pot, put the chickpeas and 1 teaspoon of baking soda. Cook over medium-high heat, tossing constantly, for about 3 to 4 minutes.
  • Add 7 cups of water to cover the beans by several inches. Season with a big pinch of kosher salt (about 1 teaspoon or more if you like). Add the bay leaf and garlic. Bring to a boil, then turn the heat down and simmer, skimming off any foam or skins that float to the top.
  • Chickpeas will cook anywhere from 40 minutes to 1 1/2 hour, or until tender (cooking time will vary depending on the type and freshness of the chickpeas).

Sesame Almond Dressing🌐

  • 1/4 c. Almond Butter
  • 2 tbsp. Coconut Aminos
  • 1 tbsp. Honey | Maple Syrup
  • 3/2 tbsp. Rice Vinegar
  • 1 tbsp. Sesame Oil
  • 1 tbsp. Ginger, grated
  • 1 Garlic Cloves, grated
  • 1 tbsp. Water
  • 1/8 tsp. Salt & Black Pepper, to taste
  • In a small bowl, whisk together the almond butter through 1 tablespoon of water. If the dressing is not thin enough, add a second tablespoon of water. Season to taste with salt and pepper.

Breakfast

Thai Broccoli Salad🌐

  • 1 c. Stovetop Chickpeas
  • 1/4 c. Sesame Almond Dressing
  • 1 Broccoli, chopped into bite-sized pieces
  • 1 Purple Cabbage Heads, cored and sliced thin
  • 2 Large Carrots, peeled and grated
  • 1 Red Bell Peppers, diced
  • 2 Green Onions, green parts only, sliced on the diagonal
  • 1/2 c. Broccoli Sprouts
  • 1/2 c. Fresh Cilantro, chopped fine
  • 1/2 c. Cashew Nuts, unroasted, halved, chopped small
  • 1 Limes, sliced into quarters
  • In a large bowl, add the chickpeas through cilantro, and set aside.
  • Drizzle the Sesame Almond dressing over the salad and toss well to combine.
  • Squeeze the lime over the salad, and then garnish with chopped cashews.
  • Serve immediately.

Lunch

Adobo🌐

Servings: 8
  • 3 lb. Dark Meat Chicken | Bonesless Pork Ribs
  • 1 c. Coconut Aminos
  • 1 c. Apple Cider Vinegar
  • 1/4 c. Coconut Sugar
  • 1 tsp. Ginger
  • 6 Garlic Cloves
  • 2 Bay Leaves
  • Add all ingredients to a slow cooker, and cook on low for 6-8 hours.
  • Alternatively, add all ingredients to a pot, ensuring the liquid just coveres the meat, and cook on the stove top over medium heat for 1½ - 2 hours. stirring occasionally. If the liquid does not cover the meat, increase the amount of coconut aminos and apple cider vinegar in a 1:1 ratio until the meat is covered.
  • Serve with white or brown rice, quinoa, or cauliflower rice. Alternatively, you can serve over sautéed greens.

Tomato & Avocado Salsa w/ Cucumber Bite🌐

  • 1 Avocados, peeled and chopped small
  • 1 c. Cherry Tomatoes, chopped small
  • 1 Lemons, juiced
  • 1/2 tsp. Onion Powder
  • 1/4 tsp. Sea Salt & Black Pepper, to taste
  • 1/2 tsp. Dried Oregano
  • 2 tbsp. Fresh Cilantro, chopped
  • 2 Cucumbers, sliced
  • In a large bowl, mix the first 8 ingredients (avocado through cilantro).
  • Serve salsa with sliced cucumbers.

Greek Salmon🌐

  • 8 oz. Wild Salmon
  • 1/2 tsp. Sea Salt & Black Pepper, to taste

  • 2 Lemons, juiced
  • Preheat the oven to 350°F.
  • Season the salmon with sea salt, pepper, basil and lemon.
  • Place in the oven and bake for 30 minutes.

Hot Oatmeal🌐

Total time: 10 min

  • 2 Package Oatmeal
  • 1/2 c. Hot Water
  • Pour the hot water over the Oatmeal. Enjoy!

Dinner

Hoisin Chicken Lettuce Cups🌐

Just toss it all in a salad bowl if you prefer.

  • 1 Mangos
  • 2 tbsp. Hoisin Sauce
  • 2 Boneless Skinless Chicken Breasts
  • 1 Romaine Lettuce Heads, 10 oz
  • 1 c. Watercress Sprouts
  • Put a grill pan on high heat. Cut the two cheeks off the mango, slice each into three lengthways, then slice off the skin and discard. Dice all the flesh into ½-inch cubes. Scrunch the stone over a bowl, to extract any pulp and juice, mix with the hoisin to make a dressing, and divide between two little bowls.
  • Flatten the chicken breasts by pounding them with your fists until the fat end is the same thickness as the skinny end. Rub with 1 tablespoon of olive oil and a pinch of sea salt and black pepper, then grill for 2–3 minutes on each side, or until bar-marked and cooked through. Meanwhile, trim the lettuce, click the leaves apart, and divide between two plates, snipping the cress alongside.
  • Divide up the mango and the hoisin bowls. Slice chicken and arrange on the plates, then tuck in, using the lettuce cups as a receptable to hold everything.

Sweet Chicken Surprise🌐

  • 2 Chicken Legs, Skin On, Bone In
  • 1 Garlic Bulbs
  • 8 oz. Mixed-Color Seedless Grapes
  • 6 tbsp. Red Vermouth
  • 2 oz. Fresh Tarragon
  • 1/2 tbsp. Olive Oil
  • 1/8 tsp. Sea Salt & Black Pepper
  • 1 tbsp. Water
  • Preheat the oven to 350°F. Put a non-stick ovenproof frying pan on a high heat.
  • Rub the chicken all over with ½ a tablespoon of olive oil, season with sea salt and black pepper, and place skin-side down in the pan.
  • Fry for a couple of minutes until golden, then lightly squash the unpeeled garlic cloves with the heel of your hand and add to the pan. Pick in the grapes.
  • Turn the chicken skin-side up, pour in the vermouth, and transfer to the oven to roast for 40 minutes, or until the chicken is golden and tender, and the sauce is sticky and reduced.
  • Add a splash of water to the pan and give it a gentle shimmy to pick up all the sticky bits. Pick over the tarragon, and dish up.

Tasty Chickpea Soup🌐

Total time: 35 min
Servings: 4
Equipment: Stove
  • 10 oz. Mixed Vegetables, onion, carrot and celery
  • 1 tsp. Mixed Spice, plus extra to serve
  • 30 oz. Canned Chickpeas
  • 28 oz. Canned Plum Tomatoes
  • 7 oz. Assorted Pastas, dried
  • Tip the mixed veg into a large, deep pan on a medium heat with 1 tablespoon of olive oil and the mixed spice. Cook for 10 minutes, or until golden, stirring regularly.
  • Tip in the chickpeas (juices and all), then scrunch in the tomatoes through clean hands, followed by 2 cans' worth of water and the pasta, snapping any bigger bits as you go. Bring to a boil, then reduce to a simmer and leave to blip away for 20 minutes, or until thickened and reduced, stirring and mashing occasionally, and adding splashes of water, if needed.
  • Season to perfection with sea salt and black pepper, and serve with a drizzle of extra virgin olive oil and an extra pinch of mixed spice, if you like.

Peas, Beans, Chili, & Mint🌐

  • 1/2 oz. Fresh Mint Leaves
  • 7 oz. Fresh Podded Fava Beans | Frozen Fava Beans
  • 7 oz. Fresh Podded Green Peas | Frozen Green Peas
  • 1 Fresh Red Chilies
  • 1 Lemons
  • Rip off and reserve the top leafy half of the mint. Put the stalks in a pan of boiling salted water, then add the beans and peas and cook for 4 minutes. Meanwhile, halve and seed the chili and finely chop with the top leafy half of the mint. Place in a bowl, finely grate over a little lemon zest, then squeeze in all the juice. Add 2 tablespoons of extra virgin olive oil, mix, taste, and season to perfection with sea salt and black pepper.
  • Drain the beans and peas, reserving a cupful of cooking water and discarding the mint stalks. Pinch the skins off any larger beans, then pour the beans and peas onto a platter, toss with a few splashes of reserved cooking water, then spoon over the dressing. Drizzle with 1 more tablespoon of extra virgin olive oil and toss together at the table before tucking in.

Refried Beans🌐

Add a little spice to the beans by throwing in a bit of jalepeno. You can also bulk up the flavor by adding 1 teaspoon of dried oregano and 1/2 teaspoon ground cumin.

  • 1 tbsp. Olive Oil
  • 1/2 c. Onions, diced
  • 2 tsp. Garlic Cloves, chopped
  • 2 tsp. Chili Powder
  • 15 oz. Canned Pinto Beans, drained and rinsed
  • 1/2 c. Water
  • 1 tbsp. Limes, juiced
  • 1/8 tsp. Salt & Black Pepper
  • In a medium pot, heat the olive oil over medium heat. Add the onion and cook for about 5 minutes, or until soft and translucent. Add the garlic and cook for another minute. Sprinkle on the chili powder and cook for another minute.
  • Add the beans and water to the pot and bring it all to a boil. Reduce the heat to low and cook the mixture for 4 to 5 minutes, until about half the water has evaporated or been absorbed.
  • Remove the pot from the heat and mash the beans using a potato masher.
  • Mix the lime juice into the beans, give them a taste, and season them with salt and pepper as needed.

Yogurt and Granola🌐

  • 4 tbsp. Granola
  • Add the granola to the yogurt. Enjoy!

Steamed Asparagus🌐

Servings: 4 oz.
Equipment: Stove
  • 1/2 c. Asparagus Spears
  • Fill a pot with water. Set a steaming basket above the water and lay the asparagus in the basket. Bring the water to a boil and cover the pot and steaming basket with a lid. Steam for 7 minutes.

Shelled Pistachios🌐

  • 2 oz. Shelled Pistachios
  • Unshell the pistachios. Eat the pistachios. Enjoy the pistachios.
