Prep

Hard Boiled Eggs🌐

Total time: 12 min

Equipment: Stove
  • 2 Eggs
  • Place eggs in cold water, enough to cover the eggs by about an inch.
  • Bring the water up to a rolling boil using high heat. Then remove from heat.
  • Cover and let simmer for 10 minutes.
  • Rinse eggs under cold water until they are chilled. Serve.

Simple Marinara Sauce🌐

Total time: 30 min
Servings: 1 c.
Equipment: Stove & Refrigerator
  • 28 oz. Canned Whole Peeled San Marzano Tomatoes
  • 1/4 c. Olive Oil
  • 1/2 c. Onions, diced
  • 1 tbsp. Garlic, minced
  • 1 tbsp. Granulated Sugar
  • 2 tbsp. Fresh Basil Leaves
  • 1/8 tsp. Salt & Black Pepper
  • Pour the tomatoes into a bowl and crush them into small pieces. Make sure to keep the tomatoes below the surface of the liquid when you squeeze them—this will prevent them from bursting.
  • Warm a large pot over medium heat. Add the olive oil and onion and cook for about 10 minutes, stirring every 1–2 minutes, until the onions turn a light brown.
  • Add the garlic and cook for 1 minute. Add the tomatoes and sugar and cook the sauce for 15 minutes to thicken and meld the flavors.
  • Remove from the heat, stir in the basil, and season with salt and pepper as needed.
  • Store in a sealed container in the fridge for up to 2 weeks.

Breakfast

Korean Eggs & Rice🌐

From Jamie Oliver's 5 Ingredients

Servings: 4
  • 2 tbsp. Light Sesame Seeds
  • 4/3 c. White Basmati Rice
  • 10 oz. Kimchi
  • 2 oz. Fresh Cilantro
  • 8 Eggs
  • Toast the sesame seeds in a dry 10-inch non-stick frying pan on a medium heat. Once lightly golden, remove to a plate, reducing the heat to a medium-low. Place the rice in the pan with a small pinch of sea salt, the pour in 1⅔ cups of water. Cover and cook for 10 minutes, or until the rice has absorbed all the liquid.
  • Finely chop the kimchi with half the cilantro leaves, beat in the eggs, then pour over the rice, spreading it out evenly with a spatula. Cover and leave for another 5–10 minutes, or until the eggs are just set.
  • Loosen the edges with a spatula, then slide it out onto a plate — I like to fold one-half back on itself to expose the underside. Scatter over the toasted sesame seeds, pick over the remaining cilantro leaves, then tuck on in.

Lunch

Probiotic Salad🌐

  • 2 Hard Boiled Eggs, peeled
  • 3 Red Tomatoes
  • 1 Avocados, peeled and pitted
  • 1 tbsp. Plain Coconut Yogurt
  • 3/4 c. Sauerkraut
  • 1/4 tsp. Sea Salt
  • Dice the tomatoes, and chop the avocado and hard boiled eggs. Combine them in a large bowl.
  • Add the coconut yogurt and the sauerkraut. Toss and serve.

Creamy Polenta🌐

Total time: 30 min
Servings: 2
Equipment: Stove
  • 2 c. Vegetable Broth
  • 1 Bay Leaves
  • 1/4 c. Cornmeal
  • 2 tbsp. Salted Butter
  • 1/4 c. Parmesan Cheese
  • 1/8 tsp. Salt & Black Pepper
  • In a medium pot, combine the broth and bay leaf and bring to a boil.
  • Whisk the cornmeal into the boiling water, reduce the heat to medium, and cook, stirring constantly, for 15–20 minutes, until it has the consistency of scrambled eggs.
  • Remove the polenta from the heat and stir in the butter and Parmesan. Season the polenta with salt and pepper. Eat it as is or serve it as a side dish.

Dinner

Sausage and Pepper Pasta Skillet🌐

Other ingredients like onion, garlic, green bell pepper, and spinach can be added to the pasta to bulk it up a bit.

Servings: 2
Equipment: Broiler & Stove
  • 1 c. Simple Marinara Sauce
  • 4 oz. Penne Pasta
  • 1 tsp. Olive Oil
  • 2 Italian Sausages
  • 1 Red Bell Peppers, sliced
  • 1/4 c. Water
  • 3/4 c. Shredded Mozzarella Cheese
  • 1/8 tsp. Salt & Black Pepper
  • Position a rack in the center of the oven and turn the broiler to high.
  • Bring a large pot of salted water to a boil and cook the pasta according to package directions.
  • Meanwhile, warm a broiler-proof medium skillet over medium heat. Add the olive oil and the sausages. Cook the sausages for about 3 minutes per side, or until browned.
  • Take the sausages out of the pan and set aside. Add the bell pepper into the pan and sauté for 3 minutes.
  • Slices the sausages into ¼-inch thick pieces and return them to the pan along with the marinara and water. Reduce the heat to a simmer and cook the sauce for 5 minutes.
  • Drain the pasta, add to the skillet, and toss with the sauce. Cover with the mozzarella and put under the broiler for 1 to 2 minutes, until the cheese is melted and browned. Watch the pasta closely, as it can burn quickly. Season with salt and pepper, and serve.

Pork w/ Marsala and Juniper🌐

Total time: 20 min

  • 1/2 c. Dried Cep Mushrooms | Dried Procini Mushrooms
  • 4 Pork Escalopes, (US scallops)
  • 2 tsp. Balsamic Vinegar
  • 8 Garlic Cloves
  • 1 tbsp. Butter
  • 3 tbsp. Marsala Wine
  • 2 tbsp. Fresh Rosemary
  • 10 Juniper Berries, crushed
  • 1/4 tsp. Salt & Black Pepper
  • 1 c. Noodles, to serve
  • 1 c. Green Vegetables, to serve
  • Put the dried mushrooms in a bowl and just cover with hot water. Leave to stand. Bring a small pan of water to the boil and add the garlic cloves. Cook for 10 minutes until soft. Drain, put the garlic in a bowl and set aside.
  • Meanwhile, place the pork escalopes on a board, brush with 1 tsp of the vinegar and add a generous and even grinding of salt and black pepper.
  • Melt the butter in a large frying pan. Add the pork and fry quickly until browned on the underside. Turn the meat over and cook for another minute.
  • Add the Marsala and rosemary to the pan. Drain the dried mushrooms, saving the juices, and add them to the mixture. Stir in 4 tbsps of the mushroom juices, then add the garlic cloves, juniper berries, and remaining vinegar.
  • Simmer the mixture gently for about 3 minutes until the pork is cooked. Season lightly and serve hot with noodles and vegetables.

Chicken w/ Prosciutto and Cheese🌐

Total time: 28 min
Servings: 4
Equipment: Oven & Stove
  • 2 Slices of Prosciutto Cheese
  • 4 Boneless Skinless Chicken Breasts
  • 4 tsp. Fresh Basil Leaves
  • 2 tbsp. Olive Oil
  • 1 tbsp. Butter
  • 1/2 c. Dry White Wine
  • 2 Slices of Fontina Cheese, or Gruyere or Emmenthal
  • 1/4 tsp. Salt & Black Pepper
  • 1 c. Mixed Salad Leaves, to serve
  • Preheat the oven to 400°F. Lightly oil a baking dish.
  • Using a very sharp knife, carefully make a horizontal slit from the side into each chicken breast.
  • Cut the prosciutto slices in half crossways. Place them in the centre of each chicken breast with a basil sprig.
  • Heat the oil and butter in a wide, heavy frying pan until foaming. Cook the chicken breasts over medium heat for 1–2 minutes on each side, until they change colour. Transfer to the baking dish. Add the wine to the pan juices, stir until sizzling, then pour over the chicken and season to taste.
  • Top each chicken breast with a half slices of Fontina. Bake for 20 minutes, or until the chicken is cooked through. Serve hot, with young salad leaves.

Lamb Steaks w/ Redcurrant Glaze🌐

This is a good recipe for the barbecue. Wait until the fierce heat has subsided and the coals are dusted with white ash, then place the rosemary-rubbed steaks directly on the grill rack. Brush frequently with the glaze as they cook.

Equipment: Grill | Broiler
  • 4 Fresh Rosemary
  • 4 Lamb-Leg Steaks
  • 5 tbsp. Redcurrant Jelly
  • 2 tbsp. Raspberry Wine Vinegar | Red Wine Vinegar
  • Reserve the tips of the rosemary and finely chop the remaining leaves. Rub the chopped rosemary, salt and pepper all over the lamb.
  • Preheat the grill (broiler). Heat the redcurrant jelly gently in a small pan with 2 tbsp water and a little seasoning. Stir in the vinegar.
  • Place the lamb steaks on a foil-lined grill (broiling) rack and brush with a little of the redcurrant glaze. Cook under the grill for about 5 minutes on each side, until deep golden, brushing frequently with more redcurrant glaze.
  • Transfer the lamb to warmed plates. Top any juices from the foil into the remaining glaze and heat through gently. Pour the glaze over the lamb and serve with peas and new potatoes, garnished with fresh rosemary sprigs.

Heirloom Tomato and Beet Salad🌐

  • 1 tbsp. Olive Oil
  • 2 Mixed-Color Beets
  • 2 Heirloom Tomatoes, chopped
  • 1 tbsp. Fresh Basil Leaves
  • 1 tbsp. Olive Oil
  • 1 Garlic Cloves, minced superfine
  • 3 tbsp. Balsamic Vinegar
  • 1/4 tsp. Sea Salt & Black Pepper, to taste
  • Preheat the oven to 375°F.
  • Rub 1 tablespoon of olive oil over the whole beets and roast in the oven for 40 minutes to 1 hour, until just tender when pierced. Set aside to cool for 10 minutes.
  • Toss the tomatoes with the basil, remaining 1 tablespoon of olive oil, garlic, and balsamic vinegar in a salad bowl.
  • Peel and chop the cooked beets and add to the salad bowl, tossing to coat with the dressing.

Steamed Asparagus🌐

Total time: 10 min
Servings: 4 oz.
Equipment: Stove
  • 1/2 c. Asparagus Spears
  • Bring a pot of water to a boil. Trim off the woody ends of the asparagus.
  • Set a steaming basket above the boiling water and lay the asparagus in the basket. Cover the pot and steaming basket with a lid. Steam for 7 minutes.

Roasted Zucchini🌐

Total time: 15 min
Servings: 2
Equipment: Oven
  • 1 Fresh Zucchini
  • 1 tbsp. Olive Oil
  • 1/4 tsp. Sea Salt & Black Pepper
  • Preheat the oven to 425°F.
  • Slice the zucchini into medium-thick slices and toss with olive oil, salt, and pepper.
  • Place the zucchini in a non-stick baking dish and bake for 10–15 minutes, or until tender.

Hummus and Crackers🌐

Total time: 1 min
Servings: 2
  • 1/2 c. Hummus
  • 1/2 oz. Crackers
  • Dip the crackers in the hummus. Enjoy!
