  • 2 Eggs
  • Place eggs in cold water, enough to cover the eggs by about an inch.
  • Bring the water up to a rolling boil using high heat. Then remove from heat.
  • Cover and let simmer for 10 minutes.
  • Rinse eggs under cold water until they are chilled. Serve.

All-Purpose Stir-Fry Sauce🌐

Cool the sauce to room temperature, then store it in the refrigerator for up to 2 weeks in an airtight container.

  • 2 tsp. Cornstarch
  • 1/2 c. Water
  • 3 tbsp. Soy Sauce
  • 1 tbsp. Honey
  • 2 tsp. Sambal Oelek, aka. Chili Paste
  • 1 tbsp. Fresh Ginger, grated
  • In a small bowl, mix the cornstarch and water. Add the cornstarch mixture to a medium pot along with the soy sauce, honey, sambal oelek, and ginger. Bring the pot to a boil, reduce the heat to low, and simmer it for 5 minutes.

  • 3 Red Tomatoes
  • 1 Avocados, peeled and pitted
  • 1 tbsp. Plain Coconut Yogurt
  • 3/4 c. Sauerkraut
  • 1/4 tsp. Sea Salt
  • Dice the tomatoes, and chop the avocado and hard boiled eggs. Combine them in a large bowl.
  • Add the coconut yogurt and the sauerkraut. Toss and serve.

Lunch

Red Beans and Rice🌐

  • 1/4 c. Bacon Slices, diced
  • 1/2 c. Arborio Rice
  • 1/2 c. Tomatoes, diced
  • 3/2 tsp. Allspice, ground
  • 15 oz. Canned Red Kidney Beans, drained and rinsed
  • 1 c. Water
  • 1/8 tsp. Salt & Black Pepper
  • 1 Bay Leaves
  • 1/2 oz. Fresh Thyme
  • In a large pot with a tight-fitting lid over medium-heat, cook the bacon for about 5 minutes, or until browned. Add the rice, tomato, and allspice and cook for another 2–3 minutes.
  • Add the beans and water and bring to a boil. Drop on the bay leaf and thyme, reduce the heat to low, cover, and simmer the rice for 17 minutes.
  • Remove from the heat and let it sit, with the lid on, for another 5 minutes.
  • Fluff the rice with a fork, season it with salt and pepper, and serve.

Dinner

Chicken and Mushroom Stir-Fry🌐

Total time: 60 min

  • 3/4 c. All-Purpose Stir-Fry Sauce
  • 1 tbsp. Olive Oil
  • 1 Boneless Skinless Chicken Breasts, thinly sliced
  • 1/2 c. Mushrooms, quartered
  • 1/2 c. Onions, sliced
  • 1 tbsp. Garlic, sliced
  • 1/8 tsp. Salt & Black Pepper
  • Warm a large skillet or wok over medium-high heat. Add the oil and chicken and cook for 4–5 minutes, until the chicken is browned.
  • Add the mushrooms, onion, and garlic and cook for 4–5 minutes, stirring the ingredients every minute or so, until the onion and garlic just start to brown.
  • Add the sauce to the pan and cook for another 1–2 minutes, until the sauce is thick. Remove from the heat, taste the sauce, and season with salt and pepper.

Fire-Roasted Tomato Soup🌐

If you don't have a grill, you can roast the tomatoes in the oven. Preheat the oven to 400°F. Halve the tomatoes lengthwise, drizzle them with olive oil, and place them cut-side up on a parchment-lined sheet pan. Bake them, without flipping over, for 30–35 minutes. Transfer to a bowl, cover, and peel as directed.

  • 6 Roma Tomatoes
  • 3 tbsp. Olive Oil, divided
  • 1 c. Onions, diced
  • 2 Large Garlic Cloves, minced
  • 4 c. Whole Milk
  • 1/4 c. Fresh Basil, thinly sliced
  • 1/8 tsp. Salt & Black Pepper
  • Heat the grill to 450°F.
  • Drizzle the whole tomatoes with 1 tablespoon of olive oil and throw them on the grill. Cook the tomatoes for 12–15 minutes, turning every 2 minutes, until charred around the edges and soft in the middle.
  • Put the roasted tomatoes in a large bowl and cover very tightly with plastic wrap. Let the tomatoes sit for 10 minutes, then peel off and discard the skin.
  • Warm a large pot over medium-high heat. Add 2 tablespoons of olive oil and the onion and sauté for 5 minutes, or until softened. Add the garlic and cook for another minute.
  • Add the tomatoes and milk, reduce the heat to medium-low, and simmer for 20 minutes (do not boil!).
  • Remove from the heat, add the basil, and blast the whole thing with an immersion blender. (Or do this in a regular blender, but take the steam vent out of the center of the lid and cover the hole with a towel.)
  • Taste the soup and season with salt and pepper until it tastes good. Serve hot.

Glorius Stuffed Squash🌐

From Jamie Oliver's 5 Ingredients Mediterranean

  • 1/4 c. Boiling Kettle Water
  • 1 Large Squash, such as kabocha, Crown Prince, red kuri, butternut
  • 1/4 tsp. Sea Salt & Black Pepper
  • 1 tbsp. Olive Oil
  • 1 oz. Fresh Italian Parsley
  • 8 oz. Mixed Grains, cooked
  • 2 tsp. Harissa
  • 1/8 tsp. Salt & Pepper
  • 2 Large Eggs
  • Preheat the oven to 350°F. Carefully cut the squash in half, scoop out and discard the seeds, then trim the ends and rub all over with sea salt, black pepper, and olive oil.
  • Place in a roasting pan, flesh-side up, and roast for 50 minutes, or until tender (if you're using butternut squash, scoop some soft flesh out to make a gully for the grains all along the length of the squash).
  • Pick and finely chop the parsley, then toss most of it with the grains, along with 1 heaping teaspoon of harissa (and any extra butternut squash flesh, if using). Season with a pinch of salt and pepper, then divide between the squash halves. Make a well in the middle and crack an egg into each, then bake for 15 minutes for an oozy egg, or a little longer, if you prefer.
  • Mix the remaining harissa with enough boiling kettle water to loosen, then drizzle over the squash and scatter over the remaining chopped parsley, to serve. At the table, break and mix the oozy egg through the grains, and tuck in.

Pork w/ Marsala and Juniper🌐

Servings: 4

  • 1/2 c. Dried Cep Mushrooms | Dried Procini Mushrooms
  • 4 Pork Escalopes, (US scallops)
  • 2 tsp. Balsamic Vinegar
  • 8 Garlic Cloves
  • 1 tbsp. Butter
  • 3 tbsp. Marsala Wine
  • 2 tbsp. Fresh Rosemary
  • 10 Juniper Berries, crushed
  • 1/4 tsp. Salt & Black Pepper
  • 1 c. Noodles, to serve
  • 1 c. Green Vegetables, to serve
  • Put the dried mushrooms in a bowl and just cover with hot water. Leave to stand. Bring a small pan of water to the boil and add the garlic cloves. Cook for 10 minutes until soft. Drain, put the garlic in a bowl and set aside.
  • Meanwhile, place the pork escalopes on a board, brush with 1 tsp of the vinegar and add a generous and even grinding of salt and black pepper.
  • Melt the butter in a large frying pan. Add the pork and fry quickly until browned on the underside. Turn the meat over and cook for another minute.
  • Add the Marsala and rosemary to the pan. Drain the dried mushrooms, saving the juices, and add them to the mixture. Stir in 4 tbsps of the mushroom juices, then add the garlic cloves, juniper berries, and remaining vinegar.
  • Simmer the mixture gently for about 3 minutes until the pork is cooked. Season lightly and serve hot with noodles and vegetables.

Beef Strips w/ Orange and Ginger🌐

Marinating the meat for longer will make it more tender, as the marinade will break down and tenderize the flesh. Just before serving, toss the stir-fry with 5ml/1 tsp sesame oil. If you haven't any sesame oil, use flavored chili oil, or a nut oil, such as hazelnut or walnut.

  • 1 lb. Lean Beef Steak | Beef Tenderloin | Beef Sirloin, cut into thin strips
  • 1 Oranges, grated and juiced
  • 1 tbsp. Light Soy Sauce
  • 1 tsp. Cornstarch
  • 1 tbsp. Ginger, finely chopped
  • 1 tbsp. Sunflower Oil
  • 1 Large Carrots, cut into thin strips
  • 2 Green Onions, thinly sliced
  • 1 c. Noodles | Rice, to serve
  • Place the beef strips in a bowl and sprinkle over the orange rind and juice. If possible, leave to marinate for 10 minutes, or up to 30 minutes if you can spare the time.
  • Drain the liquid from the meat and set aside, then mix the meat with the soy sauce, cornstarch and ginger, making sure the meat is evenly covered.
  • Heat the oil in a wok or large frying pan and add the beef. Stir-fry for 1 minute until lightly colored, then add the carrot strips and stir-fry for another 2–3 minutes.
  • Stir in the spring onions and reserved liquid, then cook, stirring, until boiling and thickened. Serve hot with noodles or rice.

Lamb Steaks w/ Redcurrant Glaze🌐

This is a good recipe for the barbecue. Wait until the fierce heat has subsided and the coals are dusted with white ash, then place the rosemary-rubbed steaks directly on the grill rack. Brush frequently with the glaze as they cook.

Equipment: Grill | Broiler
  • 4 Fresh Rosemary
  • 4 Lamb-Leg Steaks
  • 5 tbsp. Redcurrant Jelly
  • 2 tbsp. Raspberry Wine Vinegar | Red Wine Vinegar
  • Reserve the tips of the rosemary and finely chop the remaining leaves. Rub the chopped rosemary, salt and pepper all over the lamb.
  • Preheat the grill (broiler). Heat the redcurrant jelly gently in a small pan with 2 tbsp water and a little seasoning. Stir in the vinegar.
  • Place the lamb steaks on a foil-lined grill (broiling) rack and brush with a little of the redcurrant glaze. Cook under the grill for about 5 minutes on each side, until deep golden, brushing frequently with more redcurrant glaze.
  • Transfer the lamb to warmed plates. Top any juices from the foil into the remaining glaze and heat through gently. Pour the glaze over the lamb and serve with peas and new potatoes, garnished with fresh rosemary sprigs.

Escalopes of Veal w/ Cream Sauce🌐

If they are too thick, flatten the escalopes with a rolling pin. It'll help to cut down the cooking time.

  • 1 tbsp. All-Purpose Flour
  • 4 Veal Escalopes
  • 2 tbsp. Sunflower Oil
  • 1 Shallots, chopped
  • 2 c. Oyster Mushrooms, sliced
  • 2 tbsp. Marsala Wine | Dry Sherry
  • 1 c. Crème Fraîche | Sour Cream
  • 2 tbsp. Fresh Tarragon, chopped
  • 1/4 tsp. Salt & Black Pepper
  • Season the flour and use to dust the veal, then set the meat aside.
  • Heat the oil in a large frying pan and cook the shallot and mushrooms for 5 minutes. Add the escallops and cook over a high heat for about 1½ minutes on each side. Pour in the Marsala or sherry and cook until reduced by half.
  • Remove the escalopes from the pan. Stir in the crème fraîche, tarragon and seasoning into the juices in the pan and simmer gently for 3–5 minutes, or until the sauce it thick and creamy.
  • Return the escalopes to the pan and heat through for 1 minute before serving with the sauce, noodles and broccoli.

Heirloom Tomato and Beet Salad🌐

  • 1 tbsp. Olive Oil
  • 2 Mixed-Color Beets
  • 2 Heirloom Tomatoes, chopped
  • 1 tbsp. Fresh Basil Leaves
  • 1 tbsp. Olive Oil
  • 1 Garlic Cloves, minced superfine
  • 3 tbsp. Balsamic Vinegar
  • 1/4 tsp. Sea Salt & Black Pepper, to taste
  • Preheat the oven to 375°F.
  • Rub 1 tablespoon of olive oil over the whole beets and roast in the oven for 40 minutes to 1 hour, until just tender when pierced. Set aside to cool for 10 minutes.
  • Toss the tomatoes with the basil, remaining 1 tablespoon of olive oil, garlic, and balsamic vinegar in a salad bowl.
  • Peel and chop the cooked beets and add to the salad bowl, tossing to coat with the dressing.

Roasted Zucchini🌐

Total time: 15 min

  • 1 Fresh Zucchini
  • 1 tbsp. Olive Oil
  • 1/4 tsp. Sea Salt & Black Pepper
  • Preheat the oven to 425°F.
  • Slice the zucchini into medium-thick slices and toss with olive oil, salt, and pepper.
  • Place the zucchini in a non-stick baking dish and bake for 10–15 minutes, or until tender.

Steamed Asparagus🌐

Total time: 10 min
Servings: 4 oz.
Equipment: Stove
  • 1/2 c. Asparagus Spears
  • Bring a pot of water to a boil. Trim off the woody ends of the asparagus.
  • Set a steaming basket above the boiling water and lay the asparagus in the basket. Cover the pot and steaming basket with a lid. Steam for 7 minutes.
