Prep

Hard Boiled Eggs🌐

  • 2 Eggs
  • Place eggs in cold water, enough to cover the eggs by about an inch.
  • Bring the water up to a rolling boil using high heat. Then remove from heat.
  • Cover and let simmer for 10 minutes.
  • Rinse eggs under cold water until they are chilled. Serve.

Breakfast

Probiotic Salad🌐

  • 2 Hard Boiled Eggs, peeled
  • 3 Red Tomatoes
  • 1 Avocados, peeled and pitted
  • 1 tbsp. Plain Coconut Yogurt
  • 3/4 c. Sauerkraut
  • 1/4 tsp. Sea Salt
  • Dice the tomatoes, and chop the avocado and hard boiled eggs. Combine them in a large bowl.
  • Add the coconut yogurt and the sauerkraut. Toss and serve.

  • 1 c. Cucumbers, peeled, diced

  • 1/4 tsp. Sea Salt, to taste
  • Add all ingredients into a salad bowl, toss, and enjoy.

Crispy Garlicky Chicken🌐

Equipment: Food Processor
  • 4 Boneless Skinless Chicken Breasts
  • 4 Slices of Whole Wheat Bread, with seeds
  • 2 Garlic Cloves
  • 2 Lemons
  • 7/2 oz. Arugula
  • Place the chicken breasts between two large sheets of parchment paper, and whack with the base of a large non-stick frying pan to flatten them to about ½ inch thick. Tear the bread into a food processor, then peel, chop, and add the garlic, and blitz into fairly fine crumbs. Pour the crumbs over the chicken, roughly pat onto each side, then re-cover with the paper and whack again, to hammer the crumbs into the chicken and flatten them further.
  • Put the pan on a medium heat. Fry the crumbled chicken 1 tablespoon of olive oil for 3 minutes on each side, or until crisp, golden, and cooked through. Slice, plate up, season to perfection with sea salt and black pepper, sprinkle with lemon-dressed arugula, and serve with lemon wedges, for squeezing over.

Turkey Breakfast Sausage🌐

  • 1 lb. Ground Turkey
  • 2 tsp. Fennel Seeds, ground
  • 1/2 tsp. Garlic Powder
  • 1/4 tsp. Sea Salt & Black Pepper, to taste
  • 1 tbsp. Avocado Oil | Coconut Oil
  • In a medium-sized mixing bowl, combine and mix the first 4 ingredients (ground turkey through salt and pepper), and refrigerate for at least 30 minutes to firm the meat texture.
  • Once the mixture has been cooled, form into patties and place on a lined plate.
  • In a large skillet, heat oil on medium heat. Once oil is hot, add the patties. Cook for about five minutes per side, or until no longer pink in the middle.

Dinner

Quick Crispy Duck🌐

From Jamie Oliver's 5 Ingredients Mediterranean
Total time: 22 min
Servings: 2
Equipment: Stove
  • 2 Duck Breast Fillets, skin on
  • 1 oz. Fresh Sage
  • 1/2 lb. Purple Broccolini
  • 1 Large Oranges
  • 15 oz. Canned Cannellini Beans
  • Score the duck skin, rub all over with sea salt and black pepper, then place the fillets skin-side down in a cold non-stick frying pan and turn the heat on to medium. Cook for 8 minutes without moving the duck, until the fat is well rendered, and the skin is golden and crisp. Turn the duck over and cook for a further 4 minutes, basting with the fat.
  • Meanwhile, pick the sage leaves. Trim the broccolini stalks, halving the stems lengthways. Top and tail the orange, trim off the skin and slice into rounds or segments, and toss with 1 teaspoon of red wine vinegar and a small pinch of salt and pepper.
  • When the time's up, remove the duck to a plate and rest, leaving the pan on the heat. Add the sage leaves for 1 minute, or until crispy, jiggling the pan occasionally and transferring them to the duck plate as you go. Cook the broccolini in the pan for 4 minutes, or until lightly charred. Pour in the beans (juices and all), then cover and cook for 3 minutes.
  • Season to perfection, divide between plates and drizzle over any resting juices. Slice the duck and range on top, and scatter over the crispy sage and orange.

Cucumber and Turkey "Pizzas"🌐

  • 1 tbsp. Olive Oil
  • 1/2 Onions, diced
  • 1 lb. Ground Turkey
  • 1/8 tsp. Sea Salt & Black Pepper, to taste
  • 1 Cucumbers, sliced into rounds
  • 1/4 c. Avocados, mashed
  • 1 Red Tomatoes, diced
  • 1 Limes, juiced
  • 2 tbsp. Fresh Cilantro
  • In a large skillet over medium heat, heat the olive oil. To the skillet, add the next 4 ingredients (onion through salt and pepper). Cook for 5 to 10 minutes, until the turkey is cooked through.
  • Arrange the cucumber slices in a single layer on a large platter. Spoon mashed avocado onto each slice, then top with ground turkey.
  • In a small bowl, mix the remaining ingredients with sea salt and pepper to taste, spoon over turkey, and serve.

Sticky Kickin' Wings🌐

From Jamie Oliver's 5 Ingredients
Total time: 45 min

Equipment: Stove
  • 1 tbsp. Light Sesame Seeds
  • 4 Chicken Wings
  • 2 tbsp. Teriyaki Sauce
  • 1 Fresh Red Chilies
  • 2 Green Onions
  • 1/2 tsp. Red Wine Vinegar
  • Toast the sesame seeds in a dry 8-inch non-stick frying pan on a medium heat until lightly golden, then remove to a plate.
  • Still on the heat, sit the wings in the pan — they should fit snugly. Let them color for 1 minute on each side, then add the teriyaki and just cover the wings with water. Halve the chili lengthways and add to the pan. Simmer for 35 to 40 minutes, or until the chicken is tender and the sauce is nice and sticky, turning occasionally.
  • Add a splash of red wine vinegar to the pan and jiggle around to pick up the gnarly bits. Trim and finely slice the scallions, scatter them over the chicken with the toasted sesame seeds, and get stuck in.

Caveman Roasted Turkey Legs🌐

You can substitute chicken legs for the turkey legs, but cut total cooking time down by about 15 minutes.

  • 1 tsp. Light Brown Sugar
  • 1 tsp. Garlic Powder
  • 1 tsp. Onion Powder
  • 1 tsp. Smoked Paprika
  • 1 tsp. Salt & Black Pepper
  • 2 Turkey Drumsticks
  • 2 tsp. Olive Oil
  • Preheat the oven to 375°F.
  • In a small bowl, stir together the brown sugar, garlic powder, onion powder, smoked paprika, salt, and pepper.
  • Season the turkey drumsticks generously with the seasoning blend. Use the oil to lightly coat a small roasting pan. Put the drumsticks in the pan, making sure they aren't touching, and roast them for 30 minutes.
  • Flip the turkey legs and roast them for another 30 minutes, or until a thermometer inserted into the thickest part of the meat registers 170°F.

Tasty Chickpea Soup🌐

From Jamie Oliver's 5 Ingredients Mediterranean
Total time: 35 min
Servings: 4
Equipment: Stove
  • 10 oz. Mixed Vegetables, onion, carrot and celery
  • 1 tsp. Mixed Spice, plus extra to serve
  • 30 oz. Canned Chickpeas
  • 28 oz. Canned Plum Tomatoes
  • 7 oz. Assorted Pastas, dried
  • Tip the mixed veg into a large, deep pan on a medium heat with 1 tablespoon of olive oil and the mixed spice. Cook for 10 minutes, or until golden, stirring regularly.
  • Tip in the chickpeas (juices and all), then scrunch in the tomatoes through clean hands, followed by 2 cans' worth of water and the pasta, snapping any bigger bits as you go. Bring to a boil, then reduce to a simmer and leave to blip away for 20 minutes, or until thickened and reduced, stirring and mashing occasionally, and adding splashes of water, if needed.
  • Season to perfection with sea salt and black pepper, and serve with a drizzle of extra virgin olive oil and an extra pinch of mixed spice, if you like.

Beets🌐

  • 4 Beets, peeled
  • 1/4 c. Fresh Parsley, chopped
  • 1 tbsp. Apple Cider Vinegar
  • 1/2 Lemons, juiced
  • 1/8 tsp. Sea Salt, to taste
  • Steam the beets for 15 minutes.
  • Set beets aside to cool down until cool enough to handle.
  • Dice beets and toss with parsley, apple cider vinegar, lemon juice and sea salt.

Sweet Corn with Maple-Bourbon Brown Butter and Bacon🌐

Total time: 15 min
Servings: 4
  • 4 Maple-Glazed Bacon Slices, chopped
  • 3 tbsp. Challenge Butter
  • 3 Ear of Sweet Corn, kernels cut off cob (about 4 cups)
  • 2 Spring Onions, chopped
  • 2 tbsp. Bourbon
  • 3/2 tsp. Maple Syrup, real
  • 1/2 tsp. Salt & Black Pepper
  • Add bacon to a large skillet over medium heat. Cook until crispy then remove to a paper towel-lined plate to drain and set aside. Remove bacon grease from skillet.
  • Melt butter in skillet then, when it begins to foam, start swirling skillet until the butter reaches caramel brown in color.
  • Add sweet corn, green onions, bourbon, maple syrup, salt, and pepper then turn the heat up slightly and toss to combine. Saute for 7-8 minutes or until corn is tender and caramelized, stirring every so often.
  • Add bacon back in then taste and adjust salt and pepper if necessary.

Steamed Asparagus🌐

Total time: 10 min
Servings: 4 oz.
Equipment: Stove
  • 1/2 c. Asparagus Spears
  • Fill a pot with water. Set a steaming basket above the water and lay the asparagus in the basket. Bring the water to a boil and cover the pot and steaming basket with a lid. Steam for 7 minutes.

Snacks

Apricot Butter Bars🌐

Store in an airtight container. The cook time may vary depending on the model of dehydrator you use.
Total time: 130 min
Servings: 5
  • 1 tbsp. Chia Seeds
  • 3 tbsp. Nut Butter | Seed Butter, unsweetened
  • 1/2 c. Dried Figs
  • 3/2 c. Dried Apricots
  • 3 tbsp. Coconut Flakes, dried
  • 1 c. Granola | Muesli
  • Add the ingredients to a food processor and combine well until a ball of thick paste is formed
  • Scoop the ingredients out onto a large piece of baking paper
  • Cover the mixture with the excess paper and flatten slightly
  • Roll out with a rolling pin until the mixture forms a flat slab about 1.5 cm thick
  • Dehydrate for approximately 12 hours at 125 degrees.
  • If you do not have a dehydrator you could either set these bars in the fridge, or cook them at the ovens lowest temperature for a day. If you are storing them in the fridge rather than dehydrating them they will be a little sticky. Dehydrating them removes the moisture and makes them easier to store and eat.

Coconut Yogurt and Chocolate Almonds🌐

Total time: 5 min

  • 1 c. Coconut Yogurt
  • 1 tbsp. Sliced Almonds
  • 1 tbsp. Dark Chocolate Chips (70%)
  • Combine all three. Serve and enjoy.
