  • 3 tbsp. Apple Cider Vinegar
  • 6 Celery Stalks
  • 3 Onions
  • 18 Large Carrots

  • 3/4 tsp. Sea Salt & Black Pepper, to taste
  • Slow Cooker: Place the chicken, vinegar, and vegetables in a slow cooker. Fill with water to 1-inch below the top of the slow cooker. Cover, and cook on high for 8–12 hours.
  • Electric Pressure Cooker: Place the chicken, vinegar, and vegetables into the pot of the pressure cooker. Fill two-thirds of the way up with water and secure the pressure cooker lid. Press the Manual button, set the pressure on high, and set the timer to 90 minutes.
  • Stove Top: Place the chicken, vinegar, and vegetables in a stockpot. Fill with water to 1-inch below the top of the stockpot. Bring to a boil, reduce the heat to medium-low, and simmer for 8–12 hours.
  • Season with salt and pepper to taste.
  • Strain, pour into Mason jars, and refrigerate.

Everything Seasoning🌐

  • 4 oz. Arugula
  • 2 Lemons
  • 7/2 oz. Parmesan Cheese, plus extra to serve
  • 7/2 oz. Shelled Unsalted Pistachios
  • Cook the pasta in a pan of boiling salted water according to package instructions, then drain, reserving a cupful of starchy cooking water.
  • Meanwhile, place most of the arugula in a blender, finely grate in the lemon zest and squeeze in all the juice. Drizzle in 6 tablespoons of extra virgin olive oil, then add the Parmesan, 2 tablespoons of starchy cooking water and most of the pistachios, and whiz until smooth.
  • When the time's up, toss the pasta and sauce together, loosening with a splash of starchy cooking water, if needed.
  • Finely chop the remaining pistachios and sprinkle the remaining arugula over the top.
  • Finish with an extra grating of Parmesan and a drizzle of extra virgin olive oil.

Quinoa Tabouli🌐

  • 2 c. Cooked Quinoa
  • 1 c. Fresh Parsley, minced
  • 1/2 c. Fresh Mint Leaves, minced
  • 1/4 c. Red Onions, minced
  • 2 Spring Onions, green parts only, chopped small
  • 1 c. Cherry Tomatoes, sliced in halves or quarters
  • 2 Small Cucumbers, chopped small

  • 3 c. Bone Broth
  • 1 tbsp. Avocado Oil | Coconut Oil
  • 1 Leeks, chopped
  • 1 Garlic Cloves, minced
  • 1 Celery Stalks, chopped
  • 4 c. Broccoli Heads, chopped
  • 2 c. Full-Fat Coconut Milk
  • 1/4 tsp. Sea Salt & Black Pepper, to taste
  • Heat the coconut oil in a soup pot on medium-heat. Add the leeks and cook until softened, about 6 minutes.
  • Add the garlic, and sauté until fragrant, about 1 minute.
  • Add the celery, broccoli, and bone broth and bring to a boil, reduce the heat to simmer for 5 minutes.
  • Add the coconut milk and simmer until heated through, about 3 minutes.
  • Remove from the heat and let cool slightly.
  • Purée the soup in batches in a vented high-speed blender until combined.
  • Return to the pot, bring back to a simmer, and add salt and pepper to taste.
  • Serve warm.

Island Salad🌐

  • 1 English Cucumbers
  • 2 Loaves of Pita
  • 15 oz. Canned Sliced Peaches, in juice
  • 4 oz. Mixed Salad Leaves
  • 2 oz. Halloumi Cheese
  • 1 tbsp. Red Wine Vinegar
  • 1 tbsp. Extra Virgin Olive Oil
  • 1/8 tsp. Sea Salt & Black Pepper
  • Using a vegetable peeler, peel the cucumber lengthways into long delicate ribbons, discarding the seedy core, and place in a bowl with a pinch of sea salt and black pepper, and 1 tablespoon each of red wine vinegar and extra virgin olive oil.
  • Toast the pitas until golden, then slice into strips and arrange around the edges of two plates.
  • Place a large non-stick frying pan on a high heat. Drain and roughly chop the peaches (reserving the juice), then place in the pan with a good splash of the reserved juice, and season with pepper. Warm through for a few minutes while you toss the salad leaves with the dressed cucumber, and plate up.
  • Remove the peaches to a bowl, give the pan a quick wipe with a ball of paper towel, then use the fine side of a box grater to grate half the halloumi over the surface of the pan. Leave on the heat for 1–2 minutes, or until golden on one side, then tip directly over one of the plates, using a spatula to ease it away from the pan, if needed. Repeat with the remaining halloumi for the second plate. Spoon over the peaches, and tuck straight in.

Pear & Gorgonzola Farfalle🌐

  • 5/2 oz. Gorgonzola Cheese
  • 4 oz. Radicchio | Red Endives (, ½ | 2)
  • 2 Fresh Pears, super-ripe
  • 1 oz. Walnut Halves
  • 1 tsp. Red Wine Vinegar
  • 1/8 tsp. Sea Salt & Black Pepper
  • 1 tsp. Extra Virgin Olive Oil
  • Cook the pasta in a medium pan of boiling salted water according to the package instructions, then drain, reserving a cupful of cooking water. Melt the cheese in a heatproof bowl above the pasta while it cooks, removing carefully when gooey.
  • Meanwhile, slide the radicchio ½ inch thick. Place it in a large dry non-stick frying pan on a high heat to char for 5 minutes, turning halfway. Peel the pears with a vegetable peeler, then quarter, core, and finely slice lengthways. Toss into the pan, crumble in most of the walnuts, add a splash of pasta cooking water, reduce to a medium heat and pop the lid on, then leave to caramelize slightly.
  • Toss the drained pasta and oozy Gorgonzola into the pear pan with a splash of red wine vinegar, and a splash of reserved cooking water, if needed. Taste, season to perfection with sea salt and black pepper, crumble over the remaining walnuts, and drizzle with 1 teaspoon of extra virgin olive oil.

Microgreens Salad🌐

  • 1/2 c. Balsamic Vinegar
  • 1/4 c. Honey | Maple Syrup
  • 4 c. Romaine Lettuce, chopped
  • 1 c. Microgreens, of your choice
  • 1 c. Cherry Tomatoes, chopped
  • 2 tbsp. Fresh Basil Leaves, sliced thin
  • 2 Lemons, juiced
  • 2 tbsp. Extra Virgin Olive Oil
  • 1/4 tsp. Sea Salt & Black Pepper, to taste
  • To a small saucepan, add balsamic vinegar and honey (or maple syrup), turn the heat to medium, and bring to a simmer.
  • Once bubbling, reduce heat to medium-low and simmer until the mixture is reduced by half, about 10 minutes. Remove from heat and set aside to cool.
  • In a large bowl, add the next 4 ingredients (romaine lettuce through basil).
  • In a separate bowl, combine the lemon juice and extra virgin olive oil. Toss into the salad and add Everything Seasoning, salt and pepper. Mix well.

Lemony Zucchini Linguine🌐

  • 4 Fresh Mixed-Color Zucchini
  • 1 oz. Fresh Mint Leaves
  • 2 oz. Parmesan Cheese
  • 2 Lemons
  • 2 tbsp. Olive Oil
  • 2 tsp. Extra Virgin Olive Oil
  • Cook the pasta in a pan of boiling salted water according to package instructions, then drain, reserving a cupful of cooking water.
  • Meanwhile, slice the zucchini lengthways, then again into long matchsticks with good knife skills or using the julienne cutter on a mandolin (use the guard!).
  • Place a large non-stick frying pan on a medium-high heat with 1 tablespoon of olive oil, then add the zucchini. Cook for 4 minutes, tossing regularly, while you finely slice the mint leaves, then stir them into the pan.
  • Toss the drained pasta into the zucchini pan with a splash of reserved cooking water.
  • Finely grate in most of the Parmesan and a little lemon zest, squeeze in all the juice, toss well, then taste and season to perfection with sea salt and black pepper.
  • Dish up, finely grate over the remaining Parmesan, and drizzle with 1 teaspoon of extra virgin olive oil before tucking in.

Simple Rice Salad🌐

  • 3/2 c. Long Grain Rice
  • 6 Green Onions, finely sliced
  • 1 Green Bell Peppers, seeded and finely diced
  • 8 oz. Tomatoes, peeled, seeded and chopped
  • 2 tbsp. Fresh Parsley | Fresh Cilantro
  • 5 tbsp. Extra Virgin Olive Oil, for dressing
  • 1 tbsp. Sherry Vinegar, for dressing
  • 1 tsp. Dijon Mustard, for dressing
  • 1/4 tsp. Salt & Black Pepper, for dressing
  • Cook the rice in a large pan of lightly salted boiling water for 10–12 minutes, until tender, but still al dente. Be careful not to overcook it.
  • Drain the rice well in a sieve (strainer), rinse thoroughly under cold running water and drain again. Leave the rice to cool while you prepare the ingredients for the dressing.
  • Meanwhile, make the dressing by whisking all the ingredients together. Transfer the rice to a bowl and add half the dressing to moisten it and cool it further.
  • Add the spring onions, peppers, tomatoes and parsley or coriander with the remaining dressing, and toss well to mix. Season with salt and pepper to taste.

Beef, Beets, & Horseradish🌐

  • 11 oz. Mixed-Color Baby Beets
  • 6 tbsp. Creamy Horseradish
  • 6 tsp. Reduced-Fat Crème Fraîche
  • 7/2 oz. Watercress
  • 3 oz. Bresaola
  • 2 tbsp. Extra Virgin Olive Oil, divided
  • 1 tbsp. Red Wine Vinegar
  • 1/4 tsp. Sea Salt & Black Pepper
  • Scrub the beets clean, reserving any nice leaves, then finely slice into matchsticks with good knife skills or using the julienne cutter on a mandolin (use the guard!).
  • Dress the beets with ½ a tablespoon each of extra virgin olive oil and red wine vinegar, the horseradish, and crème fraîche, then season to perfection with sea salt and black pepper. Delicately toss with the watercress and any reserved beet leaves.
  • Divide up the bresaola between your plates, followed by the beet salad, then drizzle with 1 teaspoon of extra virgin olive oil, and serve.

Tomato Vegetable Soup🌐

  • 1 tbsp. Olive Oil
  • 2 c. Onions, diced
  • 1 c. Celery, diced
  • 15 oz. Crushed Tomatoes
  • 2 c. White Potatoes, diced
  • 1 c. Frozen Mixed Diced Carrots, Peas, and Corn
  • 12 c. Water
  • 1/4 tsp. Salt & Black Pepper
  • 15 oz. Canned Chickpeas, for protein
  • Warm a large pot over medium-high heat. Add the oil, onion, celery and cook for 5 minutes.
  • Throw in the tomatoes, potatoes, frozen vegetables, and water. Bring to a boil, then reduce the heat to low and simmer for 20 minutes, or until the potatoes are tender.
  • Taste the soup and season it with salt and pepper as you see fit.

Gluten-Free Fried Rice🌐

Use day-old rice for the best results, but freshly cooked can be used in a pinch. Cook the rice and then lay it out on a baking sheet in the fridge for 30 mins before using. To Store: Keep in an airtight container in the fridge for up to 3 days. To reheat: heat over medium heat on the stovetop or in the microwave. Add a little water if it looks dry. Rice shouldn’t be reheated more than once.

  • 2 tbsp. Vegetable Oil, divided
  • 1/2 c. Onions, diced
  • 1/2 c. Frozen Green Peas, partially thawed
  • 1/2 c. Frozen Carrot Slices, partially thawed
  • 1 Garlic Cloves, finely minced
  • 2 c. White Rice, cooked & cooled
  • 2 Eggs
  • 1 tbsp. Dark Sesame Oil
  • 2 tbsp. Tamari Sauce
  • 3 tbsp. Green Onions, sliced, for garnish
  • Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the diced onion and sauté until it becomes translucent, about 2–3 minutes.
  • Add the partially thawed peas, carrots, and minced garlic to the skillet. Sauté for 2–3 minutes until the vegetables are tender.
  • Push the vegetables to the side of the skillet, and add the remaining 1 tablespoon of vegetable oil. Lightly beat the eggs, pour them into the pan and scramble until fully cooked.
  • Add the cooked rice to the skillet, breaking up any clumps with a spatula. Stir-fry the rice with the vegetables and eggs for about 3–4 minutes, allowing it to heat through and slightly crisp up.
  • Pour the toasted sesame oil and gluten-free soy sauce over the rice. Stir well to evenly coat the rice and distribute the flavors.
  • Remove from heat and garnish with sliced green onions, if desired. Serve hot and enjoy.

Curried Mung Bean Soup🌐

  • 3/2 c. Mung Beans, dried, soaked for 12-24 hours then rinsed
  • 4 tbsp. Refined Coconut Oil
  • 1 tbsp. Cumin
  • 1 tsp. Turmeric
  • 1 tsp. Cayenne Pepper
  • 1/2 tsp. Cinnamon
  • 1 c. Onions, diced
  • 3 Garlic Cloves, minced
  • 1 c. Carrots, shredded
  • 5 c. Vegetable Stock
  • 1/4 tsp. Salt & Black Pepper
  • 1/2 c. Alfalfa Sprouts, to top
  • The night before, put your mung beans to soak in a pan with 6–8 cups of water. When ready to use, drain and rinse the beans. Set aside.
  • Heat the oil in a large saucepan. Add the spices and toast them in the oil until they become nicely fragrant. Add the onions and cook, stirring, for 5–7 minutes. Add the garlic and cook 1–2 minutes more.
  • Add the remaining ingredients, bring to a boil and simmer until the beans are tender, about 45 minutes. Check seasonings and adjust as necessary.

Italian Baked Rice🌐

  • 5 c. Boiling Kettle Water
  • 2 Onions
  • 1 tbsp. Olive Oil
  • 2 oz. Sliced Fennel Salami
  • 3/2 c. Arborio Rice
  • 1 tbsp. Mascarpone Cheese
  • 3/2 oz. Parmesan Cheese
  • 1/4 tsp. Sea Salt & Black Pepper
  • 1 tbsp. Extra Virgin Olive Oil
  • Preheat the oven to 350°F.
  • Place a large shallow casserole pan on a high heat. Peel and quarter the onions and quickly break apart into petals straight into the pan. Char for 4 minutes, tossing regularly.
  • Reduce to a medium heat and stir in 1 tablespoon of olive oil and the salami, then rice, followed 1 minute later by 5 cups of boiling kettle water and the mascarpone. Finely grate and stir in the Parmesan with a pinch of sea salt and black pepper.
  • Transfer the pan to the oven for 40 minutes, or until the rice has absorbed all the liquid and is just cooked through. Drizzle 1 tablespoon of extra virgin olive oil and dish up, seasoning to perfection at the table.

Pasta w/ Sun-Dried Tomatoes🌐

If you find the presentation too fussy, you can toss the tomato and raddicchio mixture with the pasta in a large bowl before serving, then sprinkle the spring onions and toasted pine nuts on top.

  • 3 tbsp. Pine Nuts
  • 12 oz. Mixed-Color Tagliatelle Pasta
  • 3 tbsp. Extra Virgin Olive Oil
  • 2 tbsp. Sun-Dried Tomato Paste
  • 2 Sun-Dried Tomatoes, drained, cut into very thin slivers
  • 3/2 oz. Fresh Radicchio Leaves , finely shredded
  • 4 Spring Onions, thinly slices into rings
  • 1/8 tsp. Salt & Black Pepper
  • Put the pine nuts in a non-stick frying pan and toss over a low to medium heat for 1–2 minutes or until they are lightly toasted and golden. Remove from the pan and set aside.
  • Cook the pasta in two large pans of lightly salted water for 10–12 minutes, using one pan for each color to keep.
  • When the pasta is cooking, heat 1 tbsp of the oil in a medium pan, or frying pan. Add the sun-dried tomato paste and the sun-dried tomatoes, then stir in 2 ladlefuls of the water used for cooking the pasta. Simmer until the sauce is slightly reduced, stirring constantly.
  • Mix in the shredded radicchio, then taste and season if necessary. Keep on a low heat. Drain the paglia e fieno, keeping the colors separate, and return the pasta to the pans. Add about 1 tbsp of oil to each pan and toss over a medium to high heat until the pasta if glistening with oil.
  • Arrange a portion of the green and white pasta in each of 4-6 warmed bowls, then spoon the sun-dried tomato and radicchio mixture in the center. Sprinkle the spring onions and pine nuts over the top and serve immediately. Before eating, each diner should toss the sauce ingredients with the pasta.

Spaghetti w/ Lemon🌐

Spaghetti is the best type of pasta for this recipe, because the olive oil and lemon juice cling to its long thin strands. If you are out of spaghetti, use another dried long pasta instead, such as spaghettini, linguine or tagliatelle.

  • Cook the pasta in a large pan of lightly salted boiling water for 10–12 minutes, until tender, then drain well and return to the pan.
  • Pour the olive oil and lemon juice over the cooked pasta, sprinkle in the slivers of garlic and add seasoning to taste.
  • Toss the pasta over a medium to high heat for 1–2 minutes. Serve immediately in four warmed bowls.

Spicy Potato and Olive Salad🌐

  • 8 Large New Potatoes
  • 1/4 tsp. Salt
  • 1/4 tsp. Granulated Sugar
  • 3 Garlic Cloves, chopped
  • 1 tbsp. Vinegar
  • 1/4 tsp. Cumin
  • 1/8 tsp. Paprika | Cayenne Pepper, to taste
  • 3 tbsp. Extra Virgin Olive Oil
  • 2 tbsp. Fresh Cilantro, chopped
  • 2 oz. Black Olives
  • Chop the new potatoes into chunks. Put them in a pan, pour in water to cover and add the salt and sugar. Bring to the boil, then reduce the heat and boil gently for about 10 minutes, or until the potatoes are just tender. Drain well and leave in a colander to cool.
  • When cool enough to handle, slice the potato chunks and put them in a bowl.
  • Sprinkle the garlic, vinegar, cumin and cayenne or paprika over the salad. Drizzle with olive oil and sprinkle over coriander and olives.

Marinated Mediterranean Olives🌐

  • 3/2 tbsp. Coriander Seeds
  • 1 Lemons
  • 3 oz. Kalamata Olives
  • 3 oz. Green Queen Olives
  • 1 tsp. Extra Virgin Olive Oil
  • 1/8 tsp. Sea Salt & Black Pepper
  • Use a pestle and mortar to crush the coriander seeds, but don’t let them get too fine.
  • Peel off long thick strips of lemon zest and place in a bowl with the olives. Squeeze in the lemon, then top with 3 times as much extra virgin olive oil. Add salt, pepper and the crushed coriander seeds.
  • Pour the dressing over the olives and leave to marinate. The longer you leave them, the better they’ll taste.

Fruit Salad🌐

  • Place strawberries in a large bowl and toss to coat in the maple syrup.
  • Add blueberries, watermelon, and jicama to the bowl.
  • In a small bowl, stir together lime juice, honey and mint. Pour over fruit and toss to coat.

Servings: 12
Equipment: Food Processor & Refrigerator
  • 1 c. Dates, pitted
  • 1/2 c. Cashew Butter
  • 1/2 c. Unsweetened Coconut Flakes, shredded
  • 2 tbsp. Chia Seeds
  • 1/2 tsp. Vanilla Extract, alcohol free
  • 2 tbsp. Maple Syrup
  • 1 Limes, zested and juiced
  • 1/8 tsp. Sea Salt
  • Add all the ingredients to a food processor, and pulse until all ingredients are blended and a thick dough forms, about 3–5 minutes.
  • When the ingredients are well incorporated, remove the blade from the food processor so you can work with the dough.
  • Form the dough into 1 tablespoon portions and roll between your hands to form balls.
  • Refrigerate for at least 2 hours, then serve and enjoy!

Peppered Tofu Scramble🌐

Total time: 15 min
Servings: 2
Equipment: Stove
  • 1 tbsp. Canola Oil
  • 1/4 c. Onions, diced
  • 1/4 c. Green Bell Peppers, diced
  • 1/4 c. Red Bell Peppers, diced
  • 1/8 tsp. Salt & Black Pepper
  • 1 c. Silken Tofu
  • Warm a medium nonstick skillet over medium heat. Add the oil, onion, and bell peppers and season with salt and black pepper. Cook the mixture for about 5 minutes, or until the peppers soften, and the onions start to turn translucent.
  • Add the tofu, break it up with a spoon, and cook for 3–4 minutes, until the tofu is hot. Serve.

Dark Chocolate-Covered Almonds🌐

Total time: 45 min
Servings: 2
Equipment: Microwave & Refrigerator
  • 1/4 c. Dark Chocolate Chips (70%)
  • 1/2 c. Almonds
  • 1/4 tsp. Sea Salt
  • Line a baking sheet with parchment paper.
  • Place chocolate chips in a medium-sized microwave-safe bowl. Microwave in 30-second increments, stirring in between, until fully melted.
  • Add almonds to the bowl and toss to coat in melted chocolate.
  • Transfer almonds one-by-one to prepared baking sheet. Sprinkle lightly with sea salt.
  • Refrigerate until set, about 30 minutes. Enjoy ¼ cup per serving. Store almonds for future snacking in an airtight container in the refrigerator for up to 2 weeks.
