Homeade Turkey Sausage Patties🌐

Store the leftovers in the fridge in an airtight container for up to 3 days. For longer storage, place in a resealable bag and freeze. Let the patties cool before storing. When ready to reuse, simply reheat in the microwave.

  • 1 lb. Ground Turkey
  • 2 Garlic Cloves, minced
  • 1 tsp. Poultry Seasoning
  • 3/4 tsp. Salt
  • 1/4 tsp. Cayenne Pepper
  • 1/4 tsp. Black Pepper, ground
  • 1/8 tsp. Cinnamon, ground
  • 1 tsp. Cooking Oil
  • Preheat the oven to 375°F. Line a baking sheet with parchment paper or aluminum foil.
  • In a medium bowl, combine the turkey, garlic, poultry seasoning, salt, cayenne, black pepper, and cinnamon and mix well.
  • Divide the turkey mixture into 6 even portions and roll into balls. Press the balls into patties about ⅛-inch thick and place on the lined baking sheet.
  • Bake the sausage patties for 12 minutes.
  • Heat a medium skillet over medium-high heat. Add the oil and sear the turkey sausage patties for about 3 minutes per side, or until browned.

Hard Boiled Eggs🌐

  • 4 Eggs
  • Place eggs in cold water, enough to cover the eggs by about an inch.
  • Bring the water up to a rolling boil using high heat. Then remove from heat.
  • Cover and let simmer for 10 minutes.
  • Rinse eggs under cold water until they are chilled. Serve.

Turkey Sausage Breakfast Sandwich🌐

Make the sandwich more substantial by adding tomato and avocado. Or, to take this in a different direction, mix together 1 teaspoon cranberry sauce and 2 tablespoons mayonaise and spread on the English muffin.

  • 2 Homeade Turkey Sausage Patties
  • 1 tsp. Cooking Oil
  • 2 Large Eggs
  • 2 English Muffins
  • 2 Slices of Swiss Cheese

  • Warm a medium skillet over medium heat. Add the oil along with the sausage patty. Crack the egg into the pan alongside the sausage and cook the sausage for about 3 minutes per side, or until browned on both sides and hot in the middle. Cook the egg to your preferred doneness.
  • While the sausage and egg are cooking, toast the English muffin.
  • Once the sausage is heated and browned, put it on the English muffin. Top the sausage with the cheese, egg, lettuce, and the other half of the English muffin.

Super Green Spaghetti🌐

  • 5 oz. Spaghetti Pasta
  • 4 Garlic Cloves
  • 7 oz. Fresh Cavolo Nero
  • 1 oz. Parmesan Cheese
  • 1 oz. Ricotta Cheese
  • Cook the pasta in a pan of boiling salted water according to the package instructions. Meanwhile, peel the garlic. Tear the stems out of the cavolo and discard, adding the leaves and the garlic to the pasta pan for 5 minutes.
  • Pour 1½ tablespoons of extra virgin olive oil into a blender, then finely grate in the Parmesan. Use tongs to carefully transfer the cavolo leaves and garlic straight into the blender and blitz for a few minutes until super-smooth. Taste and season to perfection with sea salt and black pepper.
  • Drain the pasta, reserving a cupful of cooking water. Return the pasta to the pan and toss with the vibrant green sauce, loosening with a splash of reserved cooking water, if needed, then divide between your plates. Dot over the ricotta, drizzle with a tiny bit of extra virgin olive oil, and tuck right in.

Egg Sandwich🌐

  • 4 Hard Boiled Eggs
  • 2 tbsp. Mayonnaise, for filling
  • 1 tsp. Dijon Mustard, for filling
  • 1 tsp. Chives | Green Onions, finely chopped, for filling

  • 4 Slices of Bread
  • 1/2 tsp. Butter, for bread

  • Place the eggs in a bowl and mash with a fork. Smaller egg white bits make a creamier filling.
  • Add remaining filling ingredients and gently stir to combine.
  • Butter the bread and top each slice with a lettuce lead. Divide the filling between 4 pieces of bread and spread evenly edge to edge.

Pasta w/ Broccoli and Artichokes🌐

  • 3 tbsp. Cooking Oil, divided
  • 1 Red Bell Peppers, seeded and thinly sliced
  • 1 Onions, halved and thinly sliced
  • 1 tsp. Dried Thyme
  • 3 tbsp. Sherry Vinegar
  • 4 c. Rigatoni Pasta
  • 6 oz. Marinated Artichoke Hearts, drained and thinly sliced
  • 5 oz. Broccoli, cooked, chopped
  • 20 Black Olives, pitted and chopped
  • 2 tbsp. Fresh Parsley, chopped
  • 1/8 tsp. Salt & Black Pepper
  • Heat 1-tbsp of the oil in a non-stick frying pan. Add the red pepper and onion and cook over a low heat for 8–10 minutes, or until the vegetables are just soft, stirring occasionally.
  • Stir in the thyme and vinegar. Cook for 30 seconds, stirring, then set aside.
  • Meanwhile, cook the pasta in a large pan of lightly salted boiling water. Drain, then transfer to a large serving bowl. Add 1-tbsp of the oil and toss well to coat.
  • Add the artichokes, broccoli, olives, parsley, onion mixture and remaining oil to the pasta. Toss to blend. Leave to stand for at least 5 minutes before serving.

Versatile One-Pan Veggies🌐

  • 2 tsp. Ghee
  • 1/2 Onions, diced
  • 2 tsp. Garlic Cloves, minced
  • 2 c. Dry Cauliflower Rice
  • 2 c. Fresh Spinach, finely chopped or chiffonade
  • 1 tbsp. Turmeric
  • 1/8 tsp. Sea Salt & Black Pepper
  • Heat a large skillet or wok over low-medium heat. Add the ghee and allow it to melt.
  • Add the garlic and onion. Stir intermittently until translucent.
  • Add the cauliflower rice. Stir intermittently for 5–10 minutes, until cauliflower is tender.
  • Add the spinach and stir until just wilted. Remove from heat.
  • Add in the turmeric and stir to combine.
  • Season with salt and pepper and serve.

Green Gazpacho🌐

  • 5 oz. Ciabatta
  • 1 oz. Fresh Italian Parsley
  • 7/2 oz. Shelled Unsalted Pistachios
  • 1 English Cucumbers
  • 2 Green Bell Peppers
  • 3/4 c. Cold Water
  • 3 tbsp. Cooking Oil
  • 3 tbsp. Red Wine Vinegar
  • 10 oz. Ice Cubes
  • Cut 8 thin slices of ciabatta, and toast until golden.
  • Tear the remaining bread into a blender. Keep back a little of each of the remaining ingredients for garnish. Rip the parsley into the blender with the pistachios, chop and add the cucumber, and tear in the peppers, discarding the seeds and stems.
  • Pour in ¾ cup of cold water along with 3 tablespoons each of extra virgin olive oil and red wine vinegar, then season well with sea salt and black pepper. Whiz together, then add 10 oz of ice and blitz again until silky-smooth — you may need to work in batches. Taste and adjust the seasoning, if needed.
  • Serve sprinkled with the reserved garnishes (leave whole or finely chop in a delicate fashion, whatever you prefer) and a drizzle of extra virgin olive oil, if you like. An extra ice cube or two is always a nice touch, too. Serve the crispy toasts alongside for dunking.

Pasta Primavera🌐

Any kind of fresh vegetable can be added to this pasta.
Total time: 20 min

  • 4 oz. Penne Pasta, 1⅓ cups
  • 1 tsp. Cooking Oil
  • 1/2 c. Red Bell Peppers, sliced
  • 1/2 c. Broccoli Florets
  • 1 tbsp. Garlic, chopped
  • 1 c. Pasta Sauce w/ Mushrooms
  • 1/8 tsp. Salt & Pepper
  • Cook the pasta according to the package directions.
  • While the pasta is cooking, warm a medium skillet over medium-high heat. Add the olive oil, bell peppers, and broccoli and cook for 5 minutes, stirring every minute or so, until the vegetables begin to soften.
  • Add the garlic to the pan and cook for 45 seconds to 1 minute, just until it starts to turn golden brown. Add the mushroom ragù sauce. Cook for 5–6 minutes, until the sauce is hot, and the vegetables are tender. You may need to stir a few tablespoons of the pasta cooking water into the sauce if it starts to get too thick.
  • Toss the pasta into the sauce, season with salt and pepper, and serve.

Spaghetti w/ Lemon🌐

Spaghetti is the best type of pasta for this recipe, because the olive oil and lemon juice cling to its long thin strands. If you are out of spaghetti, use another dried long pasta instead, such as spaghettini, linguine or tagliatelle.

  • 8 oz. Spaghetti Pasta
  • 1 tbsp. Cooking Oil
  • 1 Lemons, juiced
  • 1 Garlic Cloves, cut into very thin slivers
  • 1/8 tsp. Salt & Black Pepper
  • Cook the pasta in a large pan of lightly salted boiling water for 10–12 minutes, until tender, then drain well and return to the pan.
  • Pour the olive oil and lemon juice over the cooked pasta, sprinkle in the slivers of garlic and add seasoning to taste.
  • Toss the pasta over a medium to high heat for 1–2 minutes. Serve immediately in four warmed bowls.

Dinner

Curried Mung Bean Soup🌐

Total time: 60 min
Servings: 4
Equipment: Stove
  • 3/2 c. Mung Beans, dried, soaked for 12-24 hours then rinsed
  • 4 tbsp. Cooking Oil
  • 1 tbsp. Cumin
  • 1 tsp. Turmeric
  • 1 tsp. Cayenne Pepper
  • 1/2 tsp. Cinnamon
  • 1 c. Onions, diced
  • 3 Garlic Cloves, minced
  • 1 c. Carrots, shredded
  • 5 c. Vegetable Stock
  • 1/4 tsp. Salt & Black Pepper
  • 1/2 c. Alfalfa Sprouts, to top
  • The night before, put your mung beans to soak in a pan with 6–8 cups of water. When ready to use, drain and rinse the beans. Set aside.
  • Heat the oil in a large saucepan. Add the spices and toast them in the oil until they become nicely fragrant. Add the onions and cook, stirring, for 5–7 minutes. Add the garlic and cook 1–2 minutes more.
  • Add the remaining ingredients, bring to a boil and simmer until the beans are tender, about 45 minutes. Check seasonings and adjust as necessary.

White Bean and Chorizo Soup🌐

  • 1 tbsp. Cooking Oil
  • 1 c. Onions, diced
  • 1 c. Celery, diced
  • 2 Garlic Cloves, sliced
  • 1 c. Chorizo, diced
  • 15 oz. Canned Cannellini Beans, drained
  • 12 c. Water
  • 1/8 tsp. Salt & Black Pepper
  • Warm a large pot over medium-high heat. Add the oil, onion, celery, garlic, and chorizo and cook for 10 minutes, or until the vegetables are tender and lightly browned.
  • Add the beans, water, and salt and pepper to taste. Bring to a boil, then reduce the heat to low and simmer the soup for 30 minutes.
  • Taste the soup, season with more salt and pepper if needed, and serve.

Dal🌐

Total time: 45 min

  • 1 tbsp. Cooking Oil
  • 1/2 c. Onions, diced
  • 1 tbsp. Fresh Ginger, grated
  • 1 tbsp. Tomato Paste
  • 1 tbsp. Curry Powder
  • 1/2 c. Raw Red Lentils, rinsed
  • 3 c. Water
  • 1/8 tsp. Salt & Black Pepper
  • Warm a medium pot over medium heat. Add the olive oil and onion and cook for 5 minutes, or until soft. Add the ginger and cook for 30 seconds. Add the tomato paste and cook for 1 minute.
  • Sprinkle the curry powder into the pot and cook for 30 seconds. Add the lentils and water and bring to a boil. Reduce the heat to low and simmer for 25–30 minutes, until the lentils are tender.
  • Taste the dal and add salt and pepper if it needs it.

Sides

Broccoli w/ Soy Sauce and Sesame Seeds🌐

Total time: 5 min
Servings: 2
Equipment: Stove
  • 8 oz. Purple-Sprouting Broccoli
  • 1 tbsp. Light Sesame Seeds
  • 1 tbsp. Cooking Oil
  • 1 tbsp. Soy Sauce
  • 1/8 tsp. Salt & Black Pepper
  • Using a sharp knife, cut off and discard any thick stems from the broccoli and cut the broccoli into long thin florets.
  • Spread out the sesame seeds in a small frying pan and dry-fry over a medium heat until toasted. Do not leave them unattended as they will readily burn if left just a fraction too long.
  • Heat the olive oil in a wok or large frying pan and add the broccoli. Stir-fry for 3–4 minutes, or until tender, adding a splash of water if the pan becomes too dry.
  • Add the soy sauce to the broccoli, then season with salt and ground black pepper to taste. Add sesame seeds, toss to combine and serve immediately.

Cranberry Jalapeno Cream Cheese Dip🌐

  • 12 oz. Fresh Cranberries
  • 2 Green Onions
  • 1 Fresh Jalapeño Chilies, ribs and seeds removed
  • 2 tbsp. Fresh Cilantro
  • 3/4 c. Granulated Sugar
  • 1 tbsp. Lemon Juice
  • 1/8 tsp. Salt
  • 16 oz. Cream Cheese, softened
  • Use a hand food chopper to chop cranberries.
  • Chop green onion, jalapeño peppers and cilantro.
  • In a medium-sized bowl, combine the chopped cranberries, green onion, cilantro and jalapeños with the sugar, lemon juice and salt and stir gently until blended.
  • Cover with plastic wrap and place in refrigerator overnight.
  • Remove cranberry mixture from the fridge and stir. Strain out all the liquid.
  • Use a hand mixer to whip softened cream cheese smooth (about 2 minutes) and spread cream cheese over the bottom of a pie plate or 9×9 dish.
  • Pour cranberry mixture on top of the cream cheese and serve with crackers (or refrigerate until ready to serve.)

Sauteéd Zucchini🌐

  • 1 Fresh Zucchini
  • 1 tbsp. Cooking Oil
  • 1 Garlic Cloves, crushed
  • 1/8 tsp. Salt & Black Pepper, to taste
  • 1/4 Lemons, juiced, to taste
  • Heat the oil in a large skillet or frying pan over medium-high heat.
  • Wash and dry the zucchini, then slice into ⅓-inch thick slices.
  • Sauté the zucchini for 7–10 minutes, tossing regularly to ensure even cooking.
  • Add the crushed garlic and cook for another minute then season with salt, pepper, and lemon.

Steamed Asparagus🌐

Total time: 10 min
Servings: 4 oz.
Equipment: Stove
  • 1/2 c. Asparagus Spears
  • Bring a pot of water to a boil. Trim off the woody ends of the asparagus.
  • Set a steaming basket above the boiling water and lay the asparagus in the basket. Cover the pot and steaming basket with a lid. Steam for 7 minutes.

Roasted Broccoli🌐

Total time: 25 min

Equipment: Oven
  • 2 c. Broccoli
  • 2 tbsp. Cooking Oil
  • 1/4 tsp. Salt & Black Pepper
  • Preheat oven to 400°F. Cut the broccoli into pieces.
  • Toss the florets and stem pieces with oil, then transfer to a baking sheet.
  • Season with salt and pepper and roast in the preheated oven for 20 minutes.

Snacks

Oven Baked Beet Chips🌐

Total time: 90 min
Servings: 2
Equipment: Oven
  • 2 Beets, thinly sliced
  • 1 tbsp. Cooking Oil
  • 1/8 tsp. Sea Salt
  • Cut off ends and slice beets very thin using a knife or mandolin. Place in a medium bowl and drizzle with the extra virgin olive oil and sea salt. Toss. Let sit for 30 minutes.
  • Preheat the oven to 300°F. Place the beets on a greased baking sheet and bake for 30 minutes.
  • After 30 minutes, check every 5–10 minutes and take out the beets that are curled and crisp. Total baking time will be closer to one hour, but be sure to watch them as individual beets will bake quicker than other and you don't want them to burn.

Apples and Peanut Butter🌐

  • 2 Apples, sliced
  • 8 tbsp. Creamy Peanut Butter
  • Dip the apples in the peanut butter. Enjoy!
