Homeade Turkey Sausage Patties🌐

Store the leftovers in the fridge in an airtight container for up to 3 days. For longer storage, place in a resealable bag and freeze. Let the patties cool before storing. When ready to reuse, simply reheat in the microwave.

  • 1 lb. Ground Turkey
  • 2 Garlic Cloves, minced
  • 1 tsp. Poultry Seasoning
  • 3/4 tsp. Salt
  • 1/4 tsp. Cayenne Pepper
  • 1/4 tsp. Black Pepper, ground
  • 1/8 tsp. Cinnamon, ground
  • 1 tsp. Cooking Oil
  • Preheat the oven to 375°F. Line a baking sheet with parchment paper or aluminum foil.
  • In a medium bowl, combine the turkey, garlic, poultry seasoning, salt, cayenne, black pepper, and cinnamon and mix well.
  • Divide the turkey mixture into 6 even portions and roll into balls. Press the balls into patties about -inch thick and place on the lined baking sheet.
  • Bake the sausage patties for 12 minutes.
  • Heat a medium skillet over medium-high heat. Add the oil and sear the turkey sausage patties for about 3 minutes per side, or until browned.

Hard Boiled Eggs🌐

  • 6 Eggs
  • Place eggs in cold water, enough to cover the eggs by about an inch.
  • Bring the water up to a rolling boil using high heat. Then remove from heat.
  • Cover and let simmer for 10 minutes.
  • Rinse eggs under cold water until they are chilled. Serve.

Buttermilk🌐

Buttermilk freezes great for up to 3 months. You could even pour in an ice cube tray so it’s easy to use small amounts as needed.

  • 4 tsp. White Vinegar | Lemon Juice
  • 4/3 c. Milk
  • Combine the vinegar and milk in a bowl.
  • Gently stir and let the mixture sit for about 5 minutes. This will allow the milk to slightly curdle, giving it a buttermilk-like texture and taste.

Cooled Sticky Rice🌐

  • Warm a medium skillet over medium heat. Add the oil along with the sausage patty. Crack the egg into the pan alongside the sausage and cook the sausage for about 3 minutes per side, or until browned on both sides and hot in the middle. Cook the egg to your preferred doneness.
  • While the sausage and egg are cooking, toast the English muffin.
  • Once the sausage is heated and browned, put it on the English muffin. Top the sausage with the cheese, egg, lettuce, and the other half of the English muffin.

Simple 4-Ingredient Egg Salad w/ Mayo🌐

To Serve
  • 1/4 c. Honey
  • In a large mixing bowl, mix together the plain flour, the baking soda and enough sugar to taste.
  • Add the egg, blend or stir to mix, then gradually pour in just enough of the buttermilk to make a thick, smooth batter.
  • Heat a heavy pan and add the butter and oil, or fat. Place spoonfuls of the batter on to the hot pan and cook for 2–3 minutes until bubbles rise to the surface.
  • Flip the pancakes over and cook for a further 2–3 minutes. Remove from the pan and serve warm with honey.

Probiotic Salad🌐

Simple Rice Salad🌐

  • 3/2 c. Long Grain Rice
  • 6 Green Onions, finely sliced
  • 1 Green Bell Peppers, seeded and finely diced
  • 8 oz. Tomatoes, peeled, seeded and chopped
  • 2 tbsp. Fresh Parsley | Fresh Cilantro
Dressing
  • 5 tsp. Extra Virgin Olive Oil
  • 1 tsp. Sherry Vinegar
  • 1/3 tsp. Dijon Mustard
  • 1/8 tsp. Salt & Black Pepper
  • Cook the rice in a large pan of lightly salted boiling water for 10–12 minutes, until tender, but still al dente. Be careful not to overcook it.
  • Drain the rice well in a sieve (strainer), rinse thoroughly under cold running water and drain again. Leave the rice to cool while you prepare the ingredients for the dressing.
  • Meanwhile, make the dressing by whisking all the ingredients together. Transfer the rice to a bowl and add half the dressing to moisten it and cool it further.
  • Add the spring onions, peppers, tomatoes and parsley or coriander with the remaining dressing, and toss well to mix. Season with salt and pepper to taste.

Classic Carbonara🌐

Total time: 15 min

  • 1/8 tsp. Salt
  • 2 oz. Spaghetti Pasta
  • 1/2 c. Smoked Pancetta Slices, diced
  • 3 Eggs, yolks only
  • 1/4 c. Parmesan Cheese, plus extra to garnish
  • 1/8 tsp. Black Pepper, ground
  • Bring a medium pot of salted water to a boil. Add the pasta and cook according to package directions.
  • Meanwhile, warm a medium skillet over medium heat. Add the pancetta and cook 4–5 minutes, until crispy. Hold the pancetta and the rendered fat in the pan.
  • In a medium bowl, whisk together the egg yolks, ¼-cup of Parmesan, and the pepper. Whisk 2 tablespoons of the water from the pasta pot into the egg yolk mixture.
  • Drain the pasta and immediately add it to the bowl with the egg yolks. As soon as the pasta goes in the bowl, stir it with a set of tongs until the sauce is creamy. Add the pancetta along with 1 teaspoon of fat from the pan and continue to stir for another minute.
  • Taste the pasta and season with salt, if needed. Put the pasta in a serving bowl and top with the remaining 1 tablespoon of Parmesan.

Kimchi Fried Rice🌐

Ginger makes a great addition to this dish; saute it along with the garlic. To fancy the dish up a bit, serve it with a sunny-side up egg over the top.

  • 1 c. Cooled Sticky Rice
  • 1 Green Olives
  • 1 tbsp. Cooking Oil
  • 2 Garlic Cloves, very thinly sliced
  • 1/2 c. Kimchi
  • 1 tbsp. Soy Sauce
  • 1/8 tsp. Salt & Black Pepper
  • Cut the scallions in half to separate the dark-green tops from the whites. Cut the roots off the white parts, leaving as much of the scallion as possible, then cut the whites into 1-inch lengths and set aside. Slice the green tops as thinly as you can on a slight angle and set those aside.
  • Warm a large nonstick skillet or wok over high heat. Add the oil, scallion whites, and garlic and sauté for 1–2 minutes. Add the kimchi and cook for another 1–2 minutes.
  • Add the rice to the pan and let it cook for 1–2 minutes without stirring, then stir and let it sit for another 1–2 minutes. Pour the soy sauce into the pan and stir until it's evenly distributed.
  • Season the fried rice with salt and pepper, garnish with the sliced scallion greens, and serve.

Ham & Egg Curried Noodles🌐

  • 5 oz. Egg Noodles
  • 4 Green Onions
  • 7/2 oz. Roast Ham
  • 2 tsp. Curry Powder
  • 2 Eggs
  • Cook the noodles in a pan of boiling salted water according to the package instructions, then drain, reserving a cupful of cooking water. Meanwhile, trim and finely slice the scallions, and finely slice the ham.
  • Place the ham in a non-stick frying pan on a medium-high heat with 1 tablespoon of olive oil and the curry powder. While it gets nicely golden, beat the eggs. Pour them into the pan, moving them around with a rubber spatula until they start to cook, then stir in the noodles and most of the scallions. Toss over the heat for 2 minutes, then taste and season to perfection with sea salt and black pepper, lossening with a splash of reserved noodle water, if needed. Dish up the noodles, scatter over the remaining scallions, and finish with 1 tablespoon of extra virgin olive oil.

Digestive Slaw🌐

Asparagus Carbonara🌐

  • 10 oz. Penne Pasta
  • 12 oz. Asparagus Spears
  • 4 Eggs
  • 7/4 oz. Pecorino Cheese | Parmesan Cheese
  • 4 Smoked Pancetta Slices | Smoked Bacon Slices
  • 1/8 tsp. Salt
  • 1 tbsp. Cooking Oil
  • 1/8 tsp. Black Pepper
  • Cook the pasta in a large pan of boiling salted water according to the package instructions. Meanwhile, snap the woody ends off the asparagus, then slice the spears roughly the same length as the pasta, having any thick spears lengthways.
  • Separate the eggs, putting the yolks into a bowl (save the whites for making meringues another day), then finely grate in the cheese and mix together.
  • Finely slice the pancetta, then place in a large non-stick frying pan on a medium-high heat with 1 tablespoon of olive oil and a generous pinch of black pepper and cook for 4 minutes, or until golden and crisp.
  • Add the asparagus to the pancetta for 3 minutes, then drain the pasta, reserving a cupful of starchy cooking water.
  • Tip the pasta into the pancetta pan, toss and stir everything together, then remove from the heat and wait 2 minutes for the pan to cool slightly (if the pan's too hot, it'll scramble; get it right, and it'll be smooth, silky and deliciously elegant).
  • Loosen the egg mixture with a splash of cooking water, then pour over the pasta, tossing and stirring vigorously - the egg will gently cook in the residual heat.
  • Season to perfection. Adjust the consistency with extra cooking water, if needed, and finish with a pinch of pepper and an extra grating of cheese, if you like.

Sausage & Apple Bake🌐

  • 2 Red Onions
  • 2 Apples
  • 4 Parsnips
  • 12 Chipolata | Small Pork Sausages
  • 1 tbsp. Honey
  • 2 tbsp. Olive Oil, divided
  • 1 tbsp. Red Wine Vinegar
  • 1/8 tsp. Sea Salt & Black Pepper
  • Preheat the oven to 350°F.
  • Place a large non-stick ovenproof frying pan on a medium-high heat.
  • Peel the onions, cut into quarters, and quickly break apart into petals directly into the pan, tossing regularly, then add 1 tablespoon of olive oil and a pinch of sea salt and black pepper.
  • Quarter and core the apples, then toss into the pan.
  • Use a vegetable peeler to peel the parsnips into long strips. Stir 1 tablespoon of red wine vinegar into the frying pan, then pile the parsnips on top of the apples and onions.
  • Lay the sausages on top, then drizzle with 1 tablespoon of olive oil and add a pinch of black pepper from a height.
  • Bake for 30 minutes, then drizzle over the honey and return to the oven for 5 minutes, or until golden and delicious.

Chestnut Carbonara🌐

  • 5 oz. Penne Pasta
  • 3 Smoked Pancetta Slices | Smoked Bacon Slices

  • Peel the potatoes and chop into ½-inch cubes, trim and slice the scallions, then place in a large non-stick frying pan on a high heat with 2 tablespoons of olive oil and 1 cup of boiling kettle water.
  • Reduce to a simmer, then cover and cook for 15 minutes, or until the potatoes are just tender, adding the peas for the last 5 minutes, stirring occasionally.
  • Meanwhile, cook the pasta in a pan of boiling salted water according to package instructions, then drain, reserving a cupful of starchy cooking water.
  • Tip the drained pasta into the pea and potato pan, finely grate in the pecorino, then toss together, adding splashes of cooking water to loosen, if needed.
  • Season to perfection, and finish with an extra grating of pecorino and a drizzle of extra virgin olive oil, if you like.

Oven Roasted Asparagus🌐

  • 1 c. Asparagus Spears
  • 1 tsp. Olive Oil
  • 1/8 tsp. Sea Salt & Black Pepper, to taste
  • Preheat the oven to 425°F.
  • Place the trimmed asparagus in an even layer on a baking sheet and drizzle it with olive oil. Roll the stalks in the oil to ensure it coats every inch. Top with salt and pepper.
  • Place the asparagus in the center rack in the oven, and bake it for 10–12 minutes. When it is fork-tender, it’s done cooking.

Roasted Vegetables🌐

  • 4 c. Mixed Roasting Vegetables, such as peppers, mushrooms, broccoli, onion
  • 1 tbsp. Cooking Oil

  • 1 tsp. Garlic Powder
  • 1/8 tsp. Sea Salt & Black Pepper, to taste
  • Preheat the oven to 400°F.
  • Chop the veggies into uniform pieces (about 1–2 inches in diameter), and place in a large bowl.
  • To the bowl, add the remainder of the ingredients, and toss to coat.
  • Line a baking sheet with parchment paper and add veggies to the sheet.
  • Bake for 30–35 minutes, until veggies are tender and golden brown on the edges.
  • Remove the vegetables from the oven and let cool slightly before serving.

Snacks

Oven Baked Beet Chips🌐

Total time: 90 min
Servings: 2
Equipment: Oven
  • 2 Beets, thinly sliced
  • 1 tsp. Extra Virgin Olive Oil
  • 1/8 tsp. Sea Salt
  • Cut off ends and slice beets very thin using a knife or mandolin. Place in a medium bowl and drizzle with the extra virgin olive oil and sea salt. Toss. Let sit for 30 minutes.
  • Preheat the oven to 300°F. Place the beets on a greased baking sheet and bake for 30 minutes.
  • After 30 minutes, check every 5–10 minutes and take out the beets that are curled and crisp. Total baking time will be closer to one hour, but be sure to watch them as individual beets will bake quicker than other and you don't want them to burn.

Apples and Peanut Butter🌐

  • 2 Apples, sliced
  • 8 tbsp. Creamy Peanut Butter
  • Dip the apples in the peanut butter. Enjoy!
