Prep

Hard Boiled Eggs🌐

  • 4 Eggs
  • Place eggs in cold water, enough to cover the eggs by about an inch.
  • Bring the water up to a rolling boil using high heat. Then remove from heat.
  • Cover and let simmer for 10 minutes.
  • Rinse eggs under cold water until they are chilled. Serve.

Poached Chicken Breasts🌐

Eight ounces raw boneless, skinless chicken breast yields about 1 cup sliced, diced or shredded cooked chicken.

  • 3 Boneless Skinless Chicken Breasts
  • 3/8 tsp. Salt
  • Place boneless, skinless chicken breasts in a skillet or saucepan. Add lightly salted water to cover and bring to a boil.
  • Cover, reduce heat to a simmer and cook until no longer pink in the middle, 10 to 15 minutes, depending on size.

Turkey Breakfast Sausage🌐

  • 1 lb. Ground Turkey
  • 2 tsp. Fennel Seeds, ground
  • 1/2 tsp. Garlic Powder
  • 1/4 tsp. Sea Salt & Black Pepper, to taste
  • 1 tbsp. Avocado Oil | Coconut Oil
  • In a medium-sized mixing bowl, combine and mix the first 4 ingredients (ground turkey through salt and pepper), and refrigerate for at least 30 minutes to firm the meat texture.
  • Once the mixture has been cooled, form into patties and place on a lined plate.
  • In a large skillet, heat oil on medium heat. Once oil is hot, add the patties. Cook for about five minutes per side, or until no longer pink in the middle.

Egg Sandwich🌐

Total time: 20 min
Servings: 2
  • 4 Hard Boiled Eggs
  • 2 tbsp. Mayonnaise, for filling
  • 1 tsp. Dijon Mustard, for filling
  • 1 tsp. Chives | Green Onions, finely chopped, for filling
  • 1/4 tsp. Black Pepper, for filling
  • 1/8 tsp. Kosher Salt, for filling
  • 4 Slices of Bread
  • 1/2 tsp. Butter, for bread
  • 4 Leaves of Lettuce
  • Place the eggs in a bowl and mash with a fork. Smaller egg white bits make a creamier filling.
  • Add remaining filling ingredients and gently stir to combine.
  • Butter the bread and top each slice with a lettuce lead. Divide the filling between 4 pieces of bread and spread evenly edge to edge.

Lunch

Avocado, Tomato & Chicken Sandwich🌐

  • 9 oz. Poached Chicken Breasts, sliced
  • 6 Slices of Bread
  • 3/4 c. Avocados, mashed
  • 3/4 c. Red Tomatoes, sliced
  • Toast bread. Mash avocado with a fork and spread onto one piece of toast.
  • Top with sliced chicken, sliced tomato and the second piece of toast.

Peas, Beans, Chili, & Mint🌐

Servings: 4
  • 1/2 oz. Fresh Mint Leaves
  • 7 oz. Fresh Podded Fava Beans | Frozen Fava Beans
  • 7 oz. Fresh Podded Green Peas | Frozen Green Peas
  • 1 Fresh Red Chilies
  • 1 Lemons
  • Rip off and reserve the top leafy half of the mint. Put the stalks in a pan of boiling salted water, then add the beans and peas and cook for 4 minutes. Meanwhile, halve and seed the chili and finely chop with the top leafy half of the mint. Place in a bowl, finely grate over a little lemon zest, then squeeze in all the juice. Add 2 tablespoons of extra virgin olive oil, mix, taste, and season to perfection with sea salt and black pepper.
  • Drain the beans and peas, reserving a cupful of cooking water and discarding the mint stalks. Pinch the skins off any larger beans, then pour the beans and peas onto a platter, toss with a few splashes of reserved cooking water, then spoon over the dressing. Drizzle with 1 more tablespoon of extra virgin olive oil and toss together at the table before tucking in.

Dinner

Sticky Kickin' Wings🌐

  • 1 tbsp. Light Sesame Seeds
  • 4 Chicken Wings
  • 2 tbsp. Teriyaki Sauce
  • 1 Fresh Red Chilies
  • 2 Green Onions
  • 1/2 tsp. Red Wine Vinegar
  • Toast the sesame seeds in a dry 8-inch non-stick frying pan on a medium heat until lightly golden, then remove to a plate.
  • Still on the heat, sit the wings in the pan — they should fit snugly. Let them color for 1 minute on each side, then add the teriyaki and just cover the wings with water. Halve the chili lengthways and add to the pan. Simmer for 35 to 40 minutes, or until the chicken is tender and the sauce is nice and sticky, turning occasionally.
  • Add a splash of red wine vinegar to the pan and jiggle around to pick up the gnarly bits. Trim and finely slice the scallions, scatter them over the chicken with the toasted sesame seeds, and get stuck in.

Baharat Chicken Shish🌐

  • 6 Boneless Skinless Chicken Thighs
  • 1/4 c. Plain Yogurt
  • 2 tsp. Baharat Spice Mix, plus extra to serve
  • 2 Lemons
  • 1 Garlic Bulbs
  • Place the chicken thighs in a bowl with the yogurt, spice mix, 1 tablespoon of olive oil and a pinch of sea salt and black pepper. Cut 6 thin slices off one of the lemons and put aside, then squeeze the juice from the rest of the lemon into the bowl. Toss everything together really well, then cover and leave to marinate in the fridge for at least 2 hours, preferable overnight.
  • Preheat the oven to 400°F. Thread the chicken and lemon slices onto one large metal skewer, alternating chicken and lemon slices, and rest it over a roasting pan that's slightly smaller than the skewer (so that the meat is suspended above the pan). Slice the garlic bulb in half and place cut side down in the pan. Halve and throw in the remaining lemon, then roast for 40 minutes, or until gnarly and cooked through.
  • To serve, slice the chicken off the skewer, squeeze the sweet roasted garlic out of its papery skins and toss with the chicken, and sprinkle over a little extra baharat spice. Drizzle over any pan juices, and serve the jammy lemon alongside, for squeezing over. Delicious served with flatbreads, salad and pickles.

Pork w/ Marsala and Juniper🌐

Total time: 20 min
Servings: 4
Equipment: Stove
  • 1/2 c. Dried Cep Mushrooms | Dried Procini Mushrooms
  • 4 Pork Escalopes, (US scallops)
  • 2 tsp. Balsamic Vinegar
  • 8 Garlic Cloves
  • 1 tbsp. Butter
  • 3 tbsp. Marsala Wine
  • 2 tbsp. Fresh Rosemary
  • 10 Juniper Berries, crushed
  • 1/4 tsp. Salt & Black Pepper
  • 1 c. Noodles, to serve
  • 1 c. Green Vegetables, to serve
  • Put the dried mushrooms in a bowl and just cover with hot water. Leave to stand. Bring a small pan of water to the boil and add the garlic cloves. Cook for 10 minutes until soft. Drain, put the garlic in a bowl and set aside.
  • Meanwhile, place the pork escalopes on a board, brush with 1 tsp of the vinegar and add a generous and even grinding of salt and black pepper.
  • Melt the butter in a large frying pan. Add the pork and fry quickly until browned on the underside. Turn the meat over and cook for another minute.
  • Add the Marsala and rosemary to the pan. Drain the dried mushrooms, saving the juices, and add them to the mixture. Stir in 4 tbsps of the mushroom juices, then add the garlic cloves, juniper berries, and remaining vinegar.
  • Simmer the mixture gently for about 3 minutes until the pork is cooked. Season lightly and serve hot with noodles and vegetables.

Tasty Chickpea Soup🌐

From Jamie Oliver's 5 Ingredients Mediterranean
Total time: 35 min
Servings: 4
Equipment: Stove
  • 10 oz. Mixed Vegetables, onion, carrot and celery
  • 1 tsp. Mixed Spice, plus extra to serve
  • 30 oz. Canned Chickpeas
  • 28 oz. Canned Plum Tomatoes
  • 7 oz. Assorted Pastas, dried
  • Tip the mixed veg into a large, deep pan on a medium heat with 1 tablespoon of olive oil and the mixed spice. Cook for 10 minutes, or until golden, stirring regularly.
  • Tip in the chickpeas (juices and all), then scrunch in the tomatoes through clean hands, followed by 2 cans' worth of water and the pasta, snapping any bigger bits as you go. Bring to a boil, then reduce to a simmer and leave to blip away for 20 minutes, or until thickened and reduced, stirring and mashing occasionally, and adding splashes of water, if needed.
  • Season to perfection with sea salt and black pepper, and serve with a drizzle of extra virgin olive oil and an extra pinch of mixed spice, if you like.

Tandori Chicken Kebabs🌐

Serve with pilau rice and naan bread

Servings: 4
  • 4 Boneless Skinless Chicken Breast Fillets
  • 1/2 Lemons, juiced
  • 3 tbsp. Tandori Paste
  • 3 tbsp. Regular Yogurt
  • 1 Garlic Cloves, crushed
  • 1 tbsp. Onions, cut into wedges and separated into layers
  • 2 tbsp. Fresh Cilantro
  • 1 tsp. Fresh Cilantro, to garnish
  • 1/8 tsp. Salt & Black Pepper
  • Chop the chicken breasts into 3.5cm/1in cubes, place in a bowl and add the lemon juice, tandori paste, yogurt, garlic, coriander and seasoning. Mix well. Cover and set aside for 15 minutes.
  • Preheat the grill (broiler). Thread alternate pieces of chicken and onion on to four skewers (pre-soaked in water if wooden).
  • Brush the onion with a little oil, lay the kebabs on a grill (broiling) rack and cook under a high heat for 10-12 minutes, turning once. Garnish the kebabs with fresh coriander and serve at once with pilau rice and naan bread.

Sides

Steamed Asparagus🌐

Total time: 10 min
Servings: 4 oz.
Equipment: Stove
  • 1/2 c. Asparagus Spears
  • Fill a pot with water. Set a steaming basket above the water and lay the asparagus in the basket. Bring the water to a boil and cover the pot and steaming basket with a lid. Steam for 7 minutes.

Boiled Baby Potatoes w/ Dill🌐

Equipment: Stove
  • 1 lb. Baby Potatoes, with skins
  • 1 tbsp. Fresh Dill, chopped
  • 1 tbsp. Olive Oil
  • Fill a medium-sized pot with water and bring it to a boil.
  • Add the potatoes to the pot, bring water to medium-low, and allow to cook for 10 minutes, or until the potatoes are tender when pierced with a fork.
  • Drain the water and transfer potatoes to a dish.
  • Lightly mash with a potato masher, and mix in the olive oil and chopped dill. Serve warm.

Yogurt and Granola🌐

aka Yogurt & Granola;
Total time: 1 min
Servings: 2
  • 1 c. Regular Yogurt
  • 4 tbsp. Granola
  • Add the granola to the yogurt. Enjoy!

Peppered Tofu Scramble🌐

Total time: 15 min
Servings: 2
  • 1 tbsp. Canola Oil
  • 1/4 c. Onions, diced
  • 1/4 c. Green Bell Peppers, diced
  • 1/4 c. Red Bell Peppers, diced
  • 1/8 tsp. Salt & Black Pepper
  • 1 c. Silken Tofu
  • Warm a medium nonstick skillet over medium heat. Add the oil, onion, and bell peppers and season with salt and black pepper. Cook the mixture for about 5 minutes, or until the peppers soften, and the onions start to turn translucent.
  • Add the tofu, break it up with a spoon, and cook for 3 to 4 minutes, until the tofu is hot. Serve.

Coconut Yogurt and Chocolate Almonds🌐

Total time: 5 min
Servings: 2
  • 1 c. Coconut Yogurt
  • 1 tbsp. Sliced Almonds
  • 1 tbsp. Dark Chocolate Chips (70%)
  • Combine all three. Serve and enjoy.

Apricot Butter Bars🌐

Store in an airtight container. The cook time may vary depending on the model of dehydrator you use.
Total time: 130 min
Servings: 5
  • 1 tbsp. Chia Seeds
  • 3 tbsp. Nut Butter | Seed Butter, unsweetened
  • 1/2 c. Dried Figs
  • 3/2 c. Dried Apricots
  • 3 tbsp. Coconut Flakes, dried
  • 1 c. Granola | Muesli
  • Add the ingredients to a food processor and combine well until a ball of thick paste is formed
  • Scoop the ingredients out onto a large piece of baking paper
  • Cover the mixture with the excess paper and flatten slightly
  • Roll out with a rolling pin until the mixture forms a flat slab about 1.5 cm thick
  • Dehydrate for approximately 12 hours at 125 degrees.
  • If you do not have a dehydrator you could either set these bars in the fridge, or cook them at the ovens lowest temperature for a day. If you are storing them in the fridge rather than dehydrating them they will be a little sticky. Dehydrating them removes the moisture and makes them easier to store and eat.
