Over-Hard Eggs🌐

  • 2 Eggs
  • Crack 2 eggs into a cup. That allows you to make sure you don't break the yolks and to pick out any shell. Carefully pour eggs into a buttered, nonstick, non-heated pan. Turn heat on to medium.
  • Once the eggs are in the pan, break the yolks and cook until the entire egg is solid throughout. Do not disturb or move the egg around while cooking, as this will result in a scrambled egg. Once cooked through, flip and cook for an additional 3 minutes.

All-Purpose Stir-Fry Sauce🌐

Cool the sauce to room temperature, then store it in the refrigerator for up to 2 weeks in an airtight container.

  • 2 tsp. Cornstarch
  • 1/2 c. Water
  • 3 tbsp. Soy Sauce
  • 1 tbsp. Honey
  • 2 tsp. Sambal Oelek, aka. Chili Paste
  • 1 tbsp. Fresh Ginger, grated
  • In a small bowl, mix the cornstarch and water. Add the cornstarch mixture to a medium pot along with the soy sauce, honey, sambal oelek, and ginger. Bring the pot to a boil, reduce the heat to low, and simmer it for 5 minutes.

Banana Pancakes🌐

  • 2 tsp. Extra Virgin Coconut Oil
  • 2 Bananas
  • 2 Eggs
  • 1/2 c. Fresh Mixed-Berries, for garnishing
  • Melt coconut oil in a pan.
  • Blend banana and egg in a mixer until batter consistency is achieved (30 sec to 1 minute).
  • Pour batter into the pan. Cook for 2–3 minutes and then flip, cooking for an additional 1–2 minutes.
  • Cut strawberries in half to garnish.

Turkey Breakfast Sausage🌐

  • 1 lb. Ground Turkey
  • 2 tsp. Fennel Seeds, ground
  • 1/2 tsp. Garlic Powder
  • 1/4 tsp. Sea Salt & Black Pepper, to taste
  • 1 tbsp. Avocado Oil | Coconut Oil
  • In a medium-sized mixing bowl, combine and mix the first 4 ingredients (ground turkey through salt and pepper), and refrigerate for at least 30 minutes to firm the meat texture.
  • Once the mixture has been cooled, form into patties and place on a lined plate.
  • In a large skillet, heat oil on medium heat. Once oil is hot, add the patties. Cook for about five minutes per side, or until no longer pink in the middle.

First Watch BLTE🌐

  • 2 Over-Hard Eggs
  • 1 tbsp. Mayonnaise
  • 2 Slices of Whole Grain Bread
  • 3 Smoked Bacon Slices, cooked
  • 2 oz. Slices of Monterey Jack Cheese
  • 2 oz. Tomatoes, sliced
  • 1 c. Spring Mix
  • Spread mayonnaise evenly on each slice of bread.
  • Place bacon on one slice of bread; top with eggs and 1 slice of cheese on top of the eggs.
  • On the other slice of bread, place tomato slices and the other slice of cheese on top of the tomato.
  • Add spring mix to the bacon-egg side, then close the sandwich.
  • Serve with lemon-dressed greens.

Lunch

Tuna Salad Celery Boats🌐

Skipjack or chunk light tuna varieties are low in mercury. Consume no more than six 6-ounce servings per month.

  • 2 c. Tuna (COOKED AND FLAKED TUNA)*, can use canned
  • 1 Avocados, peeled and mashed
  • 1/8 tsp. Sea Salt & Black Pepper, to taste
  • 2 tbsp. Green Onions, chopped
  • 1 tsp. Red Wine Vinegar
  • 2 tbsp. Almonds, chopped
  • 2 tbsp. Fresh Cilantro, chopped
  • 4 Celery Stalks
  • In a medium bowl, mix together the first 8 ingredients (tuna through cilantro).
  • Spoon mixture into the celery and serve.

Greek Salmon🌐

  • 8 oz. Wild Salmon
  • 1/2 tsp. Sea Salt & Black Pepper, to taste

  • 2 Lemons, juiced
  • Preheat the oven to 350°F.
  • Season the salmon with sea salt, pepper, basil and lemon.
  • Place in the oven and bake for 30 minutes.

Adobo🌐

  • 3 lb. Dark Meat Chicken | Bonesless Pork Ribs
  • 1 c. Coconut Aminos
  • 1 c. Apple Cider Vinegar
  • 1/4 c. Coconut Sugar
  • 1 tsp. Ginger
  • 6 Garlic Cloves
  • 2 Bay Leaves
  • Add all ingredients to a slow cooker, and cook on low for 6-8 hours.
  • Alternatively, add all ingredients to a pot, ensuring the liquid just coveres the meat, and cook on the stove top over medium heat for 1½ - 2 hours. stirring occasionally. If the liquid does not cover the meat, increase the amount of coconut aminos and apple cider vinegar in a 1:1 ratio until the meat is covered.
  • Serve with white or brown rice, quinoa, or cauliflower rice. Alternatively, you can serve over sautéed greens.

Naked Salad Tunisienne🌐

From Jamie Oliver's 5 Ingredients Mediterranean
Total time: 18 min
Servings: 4
  • 1 Small Red Onions
  • 2 Fresh Plum Tomatoes
  • 1 Green Apples
  • 1 English Cucumbers
  • 1 oz. Fresh Mint Leaves
  • Peel the onion, quarter and seed the tomatoes, core the apple and trim the cucumber, then take care to very finely dice everything.
  • Pick the baby mint leaves and reserve for garnish, then very finely chop the rest, discarding the stems.
  • Dress everything with 3 tablespoons of extra virgin olive oil and 2 tablespoons of red wine vinegar, then season to perfection with sea salt and black pepper and scatter over the reserved mint leaves. Great served with warm flatbreads.

Dinner

Beef and Broccoli🌐

Total time: 60 min
Servings: 2
Equipment: Stove
  • 3/4 c. All-Purpose Stir-Fry Sauce
  • 3 tbsp. Olive Oil, divided
  • 1/2 lb. Flank Steaks, thinly sliced across the grain
  • 1/8 tsp. Salt & Black Pepper
  • 1 c. Broccoli Florets
  • 2 tbsp. Water
  • 1/2 c. Onions, sliced
  • 1 tbsp. Garlic, sliced
  • Warm a medium skillet over medium-high heat. Add 1 tablespoon of olive oil and the steak. Season the steak with salt and pepper. Cook only until browned, about 3–5 minutes. Take the steak out of the pan and set aside.
  • Set the skillet back over medium-high heat. Add 1 tablespoon of oil and the broccoli and sauté the broccoli for 2 minutes. Add the water to the pan, cover, and steam the broccoli for 2 minutes. Take the broccoli out of the pan and set aside.
  • Wipe the pan out with a paper towel and return it to the heat. Add the remaining 1 tablespoon of oil along with the onion. Cook until onions are soft, about 3 minutes. Then, return the cooked steak to the pot.
  • Add the garlic and cook for 1 more minute. Return the broccoli to the pan along with the stir-fry sauce and cook for 2 more minutes.
  • Taste the stir-fry and season with salt and pepper as needed.

Tasty Chickpea Soup🌐

From Jamie Oliver's 5 Ingredients Mediterranean
Total time: 35 min
Servings: 4
Equipment: Stove
  • 10 oz. Mixed Vegetables, onion, carrot and celery
  • 1 tsp. Mixed Spice, plus extra to serve
  • 30 oz. Canned Chickpeas
  • 28 oz. Canned Plum Tomatoes
  • 7 oz. Assorted Pastas, dried
  • Tip the mixed veg into a large, deep pan on a medium heat with 1 tablespoon of olive oil and the mixed spice. Cook for 10 minutes, or until golden, stirring regularly.
  • Tip in the chickpeas (juices and all), then scrunch in the tomatoes through clean hands, followed by 2 cans' worth of water and the pasta, snapping any bigger bits as you go. Bring to a boil, then reduce to a simmer and leave to blip away for 20 minutes, or until thickened and reduced, stirring and mashing occasionally, and adding splashes of water, if needed.
  • Season to perfection with sea salt and black pepper, and serve with a drizzle of extra virgin olive oil and an extra pinch of mixed spice, if you like.

Honey-Lime Roasted Carrots🌐

  • 1 lb. Carrots
  • 2 tbsp. Olive Oil
  • 1 tbsp. Honey
  • 1 Limes, juiced
  • 1/4 tsp. Sea Salt & Black Pepper
  • 1 tbsp. Fresh Parsley, chopped
  • 1 tbsp. Fresh Dill, chopped
  • Preheat the oven to 400°F. Line a baking sheet with parchment paper.
  • Slice the carrots lengthwise and set aside.
  • In a large bowl, combine the olive oil through the dill.
  • Add the carrot slices and toss to combine.
  • Pour the tossed carrots onto the lined baking sheet, in a single layer, and bake for 25–30 minutes, or until tender.
