  • In a medium bowl, whisk together the avocado oil through the thyme. Add salt and pepper, to taste.

Rice🌐

  • Rinse the rice in hot water until it blooms and the water runs clear.

Egg in a Pepper🌐

  • 2 Red Bell Peppers
  • 8 Eggs
  • Heat a non-stick skillet over medium heat. Cut the bell peppers into four ½-inch thick rings.
  • Place the bell pepper ring in the hot skillet. Crack egg into bell pepper ring; cook until bottom holds together and corners are browned, 2–3 minutes.
  • Flip and cook until desired doneness is reached, 2–3 minutes more; season with salt and ground black pepper.

Korean Eggs & Rice🌐

  • 1 tbsp. Light Sesame Seeds
  • 2/3 c. White Basmati Rice
  • 5 oz. Kimchi
  • 1 oz. Fresh Cilantro
  • 4 Eggs
  • Toast the sesame seeds in a dry 10-inch non-stick frying pan on a medium heat. Once lightly golden, remove to a plate, reducing the heat to a medium-low. Place the rice in the pan with a small pinch of sea salt, the pour in 1⅔ cups of water. Cover and cook for 10 minutes, or until the rice has absorbed all the liquid.
  • Finely chop the kimchi with half the cilantro leaves, beat in the eggs, then pour over the rice, spreading it out evenly with a spatula. Cover and leave for another 5–10 minutes, or until the eggs are just set.
  • Loosen the edges with a spatula, then slide it out onto a plate — I like to fold one-half back on itself to expose the underside. Scatter over the toasted sesame seeds, pick over the remaining cilantro leaves, then tuck on in.

Panettone French Toast🌐

A generous portion of chilled mixed berry fruits such as raspberries, blackberries, morello cherries and blueberries perfectly complements the richness of this snack.

  • 4 Slices of Panettone Bread, halved
To Serve
  • 1 tsp. Superfine Sugar
  • 1/2 c. Mixed-Berries
  • Break the eggs into a bowl and whisk lightly, then tip them into a shallow dish. Heat the butter or oil in a large non-stick frying pan.
  • Dip the panettone slices in the egg and fry for 2–3 minutes on each side until golden brown. Drain, dust with sugar and serve with the berries.

Lunch

Red Beans and Rice🌐

  • 1/4 c. Bacon Slices, diced
  • 1/2 c. Arborio Rice
  • 1/2 c. Tomatoes, diced
  • 3/2 tsp. Allspice, ground
  • 15 oz. Canned Red Kidney Beans, drained and rinsed
  • 1 c. Water
  • 1/8 tsp. Salt & Black Pepper
  • 1 Bay Leaves
  • 1/2 oz. Fresh Thyme
  • In a large pot with a tight-fitting lid over medium-heat, cook the bacon for about 5 minutes, or until browned. Add the rice, tomato, and allspice and cook for another 2–3 minutes.
  • Add the beans and water and bring to a boil. Drop on the bay leaf and thyme, reduce the heat to low, cover, and simmer the rice for 17 minutes.
  • Remove from the heat and let it sit, with the lid on, for another 5 minutes.
  • Fluff the rice with a fork, season it with salt and pepper, and serve.

Classic Carbonara🌐

Total time: 15 min

  • 1/8 tsp. Salt
  • 2 oz. Spaghetti Pasta
  • 1/2 c. Smoked Pancetta Slices, diced
  • 3 Eggs, yolks only
  • 1/4 c. Parmesan Cheese, plus extra to garnish
  • 1/8 tsp. Black Pepper, ground
  • Bring a medium pot of salted water to a boil. Add the pasta and cook according to package directions.
  • Meanwhile, warm a medium skillet over medium heat. Add the pancetta and cook 4–5 minutes, until crispy. Hold the pancetta and the rendered fat in the pan.
  • In a medium bowl, whisk together the egg yolks, ¼-cup of Parmesan, and the pepper. Whisk 2 tablespoons of the water from the pasta pot into the egg yolk mixture.
  • Drain the pasta and immediately add it to the bowl with the egg yolks. As soon as the pasta goes in the bowl, stir it with a set of tongs until the sauce is creamy. Add the pancetta along with 1 teaspoon of fat from the pan and continue to stir for another minute.
  • Taste the pasta and season with salt, if needed. Put the pasta in a serving bowl and top with the remaining 1 tablespoon of Parmesan.

Roasted Brussels Sprouts Salad w/ Maple Syrup Balsamic Dressing🌐

  • 1/4 c. Maple Syrup & Balsamic Dressing
  • 1/2 lb. Brussel Sprouts, halved
  • 2 Orange Sweet Potatoes, chopped
  • 1 Onions, thinly sliced
  • 1/2 tsp. Garlic Powder
  • 1/2 tsp. Onion Powder
  • 1/8 tsp. Sea Salt & Black Pepper, to taste
  • 2 tbsp. Olive Oil
  • 1/8 tsp. Black Pepper
  • 1/3 c. Dried Cranberries
  • 1/4 c. Black Walnuts, chopped
  • Preheat the oven to 425°F.
  • In a large bowl, add the Brussels sprouts through olive oil, and toss to coat.
  • Arrange the Brussels sprouts mixture on a lined baking sheet, and bake in the oven for 15 minutes. Toss the veggies, and bake another 10–15 minutes, until tender.
  • When the veggies are done, remove from the oven and sprinkle with additional black pepper, the dried cranberries, and chopped walnuts. Drizzle with the Maple Syrup Balsamic dressing and enjoy!

Egg Bites🌐

  • Preheat the oven to 350°F. Line 12 muffin tins with muffin liners.
  • In a pan over medium heat, cook the bell pepper, onion, garlic and kale until softened, about 7 minutes.
  • Add the pepper mixture to the bowl, then add 8 cracked eggs into the bowl, and mix to combine.
  • Pour mixture into lined muffin tins, ¾ full, to allow room for the egg bite to puff.
  • Bake for 30–35 minutes, until the middles are set and not jiggly.

Cucumber and Turkey "Pizzas"🌐

  • 1 tbsp. Cooking Oil
  • 1/2 Onions, diced
  • 1 lb. Ground Turkey
  • 1/8 tsp. Sea Salt & Black Pepper, to taste
  • 1 Cucumbers, sliced into rounds
  • 1/4 c. Avocados, mashed
  • 1 Red Tomatoes, diced
  • 1 Limes, juiced
  • 2 tbsp. Fresh Cilantro
  • In a large skillet over medium heat, heat the olive oil. To the skillet, add the next 4 ingredients (onion through salt and pepper). Cook for 5–10 minutes, until the turkey is cooked through.
  • Arrange the cucumber slices in a single layer on a large platter. Spoon mashed avocado onto each slice, then top with ground turkey.
  • In a small bowl, mix the remaining ingredients with sea salt and pepper to taste, spoon over turkey, and serve.

Dinner

Tortilla Frittata🌐

  • 1 Onions
  • 2 lb. Potatoes
  • 5 Eggs
  • 8 oz. Jarred Roasted Red Peppers
  • 3 oz. Watercress
  • 1 tsp. Cooking Oil
  • 1/4 tsp. Sea Salt & Black Pepper
  • Peel and very finely slice the onion and potatoes, then toss and mix together. Pour ½-inch of olive oil into a 9-inch non-stick ovenproof frying pan on a medium heat, After 1 minute, add the potato and onion mix (don't season at this state, as it will draw the moisture out of the potatoes) and fry gently for 25 minutes, or until tender but mostly without color, lightly tossing occasionally.
  • Drain the potatoes and onions and leave to cool slightly. Beat the eggs in a bowl, add the cooked potato and onion, then gently fold together and leave for 5 minutes — the potato will start to absorb the egg, and you should see little bubbles surrounding the potato and onion.
  • Drain and finely slice the peppers, then fold into the egg mixture and season to perfection with sea salt and black pepper. Preheat the oven to 325°F.
  • Quickly wipe out the pan, drizzle in a little olive oil, then place on a low heat. Pour the egg mixture straight into the pan and spread out. Leave for 5 minutes, then bake for 10 minutes. When the time's up, remove from the oven, then leave to rest in the pan for 5 minutes.
  • Run a knife around the edge to loosen. Quickly and confidently turn it out, using a plate or flat lid that's bigger than the pan, and serve sprinkled with a little salt and a pinch of watercress. Delicious hot or cold.

Honey Glazed Chicken🌐

  • 1 c. Rice, to serve
  • 2 Boneless Skinless Chicken Breasts
  • 1/4 c. Honey
  • 2 tbsp. Soy Sauce
  • 1 tsp. Cooking Oil
  • 1/8 tsp. Crushed Red Pepper Flakes
To Serve
  • 2 tbsp. Green Onions, sliced
  • Whisk honey, soy sauce, and red pepper flakes in a bowl; set aside.
  • Heat olive oil in a skillet over medium heat; cook and stir chicken in hot oil until lightly brown, about 5 minutes.
  • Pour honey mixture into the skillet; continue to cook and stir until chicken is no longer pink in the center and sauce is thickened, about 5 minutes more.
  • Serve hot on steamed rice and garnished with sliced green onions.

Chestnut Carbonara🌐

  • 5 oz. Penne Pasta
  • 3 Smoked Pancetta Slices | Smoked Bacon Slices
  • 1 tbsp. Cooking Oil
  • 6 oz. Chestnuts
  • 4 Eggs, yolks only
  • 3/4 oz. Pecorino Cheese | Parmesan Cheese, plus extra to serve
  • Cook the pasta in a pan of boiling salted water according to the package instructions, then drain, reserving a cupful of starchy cooking water.
  • With 4 minutes to go, finely slice the pancetta and plate in a large non-stick frying pan on a medium heat with 1 tablespoon of olive oil.
  • Once sizzling, crumble in the chestnuts and add a generous pinch of black pepper, then stir regularly until golden and crisp.
  • Meanwhile, separate the eggs, putting the yolks into a bowl, then finely grate in the cheese and mix together.
  • Tip the drained pasta into the chestnut pan, then remove from the heat and wait 2 minutes for the pan to cool slightly (if the pan's too hot, it'll scramble; get it right, and it'll be smooth, silky and deliciously elegant).
  • Loosen the egg mixture with a splash of the reserved cooking water, then pour over the pasta, tossing and stirring vigorously—the egg will gently cook in the residual heat.
  • Season to perfection. Adjust the consistency with extra cooking water, if needed, and finish with a fine grating of cheese, if you like.

Herby Steak & Crispy Potatoes🌐

  • 1 lb. Red Potatoes
  • 10 oz. Sirloin Steaks
  • 4 tsp. Pesto | Pistou
  • 6 Medium Mixed-Color Tomatoes
  • 3/4 oz. Shelled Unsalted Pistachios
  • Scrub the potatoes, chop into ¾-inch chunks, then place in a large non-stick frying pan on a medium heat with 2 tablespoons of olive oil and season with sea salt and black pepper.
  • Fry for 20 minutes, or until golden and cooked through, stirring regularly, then remove to a bowl. Put the pan back on a high heat.
  • Cut the fat off the steak, then roughly chop the fat and place in the pan to render. Generously season the steak, rub all over with 2 teaspoons of pesto, and cook for 3 minutes on each side for medium rare, or to your liking.
  • Remove to a plate to rest. Return the potatoes to the pan to warm through, while you slice the tomatoes ½-inch thick and arrange on serving plates. Dress with a splash of red wine vinegar and a drizzle of extra virgin olive oil, and season to perfection.
  • Spoon over the potatoes, then slice and divide up the steak, pouring over any resting juices.
  • Spoon over the remaining pesto, then bash and scatter over the pistachios. Finish with a drizzle of extra virgin olive oil, if you like.

Beef Strips w/ Orange and Ginger🌐

Marinating the meat for longer will make it more tender, as the marinade will break down and tenderize the flesh. Just before serving, toss the stir-fry with 5ml/1 tsp sesame oil. If you haven't any sesame oil, use flavored chili oil, or a nut oil, such as hazelnut or walnut.

  • 1 lb. Lean Beef Steak | Beef Tenderloin | Beef Sirloin, cut into thin strips
  • 1 Oranges, grated and juiced
  • 1 tbsp. Light Soy Sauce
  • 1 tsp. Cornstarch
  • 1 tbsp. Ginger, finely chopped
  • 1 tbsp. Cooking Oil
  • 1 Large Carrots, cut into thin strips
  • 2 Green Onions, thinly sliced
To Serve
  • 1 c. Noodles | Rice
  • Place the beef strips in a bowl and sprinkle over the orange rind and juice. If possible, leave to marinate for 10 minutes, or up to 30 minutes if you can spare the time.
  • Drain the liquid from the meat and set aside, then mix the meat with the soy sauce, cornstarch and ginger, making sure the meat is evenly covered.
  • Heat the oil in a wok or large frying pan and add the beef. Stir-fry for 1 minute until lightly colored, then add the carrot strips and stir-fry for another 2–3 minutes.
  • Stir in the spring onions and reserved liquid, then cook, stirring, until boiling and thickened. Serve hot with noodles or rice.

Pork w/ Marsala and Juniper🌐

  • 1/2 c. Dried Cep Mushrooms | Dried Procini Mushrooms
  • 4 Pork Escalopes, (US scallops)
  • 2 tsp. Balsamic Vinegar
  • 8 Garlic Cloves
  • 1 tbsp. Butter
  • 3 tbsp. Marsala Wine
  • 2 tbsp. Fresh Rosemary
  • 10 Juniper Berries, crushed
  • 1/8 tsp. Salt & Black Pepper
To Serve
  • 1 c. Noodles
  • 1 c. Green Vegetables
  • Put the dried mushrooms in a bowl and just cover with hot water. Leave to stand. Bring a small pan of water to the boil and add the garlic cloves. Cook for 10 minutes until soft. Drain, put the garlic in a bowl and set aside.
  • Meanwhile, place the pork escalopes on a board, brush with 1 tsp of the vinegar and add a generous and even grinding of salt and black pepper.
  • Melt the butter in a large frying pan. Add the pork and fry quickly until browned on the underside. Turn the meat over and cook for another minute.
  • Add the Marsala and rosemary to the pan. Drain the dried mushrooms, saving the juices, and add them to the mixture. Stir in 4 tbsps of the mushroom juices, then add the garlic cloves, juniper berries, and remaining vinegar.
  • Simmer the mixture gently for about 3 minutes until the pork is cooked. Season lightly and serve hot with noodles and vegetables.

Sides

Sweet and Sour Cucumber🌐

This salad can be kept in the refrigerator for up to a week.

  • 1 Cucumbers, thinly sliced
  • 1/2 Onions, thinly sliced
  • 3 tbsp. Granulated Sugar
  • 5 tbsp. White Wine Vinegar | Apple Cider Vinegar
  • 2 tbsp. Water
  • 2 tbsp. Fresh Dill, chopped
  • 1/8 tsp. Salt
  • In a bowl, mix together the sliced cucumber and onion, season with salt and toss together until thouroughly combined. Leave to stand in a cool place for 5-10 minutes.
  • Add the sugar, vinegar, water and chopped dill to the cucumber mixture. Toss together until well combined, then chill for a few hours, or until ready to serve.

Garlic Parmesan Asparagus🌐

  • 1 c. Asparagus Spears, trimmed
  • 1 Garlic Cloves, minced
  • 1 tbsp. Butter, melted
  • 1 tbsp. Parmesan Cheese, grated
  • In a large skillet, bring ½-inch water to a boil over medium heat.
  • Add asparagus and garlic; cook, covered, until asparagus is crisp-tender, 3–5 minutes; drain.
  • Toss asparagus with butter and cheese. Serve.

Roasted Vegetables🌐

  • 4 c. Mixed Roasting Vegetables, such as peppers, mushrooms, broccoli, onion
  • 1 tbsp. Cooking Oil
  • 1 tsp. Dried Oregano
  • 1 tsp. Dried Parsley
  • 1 tsp. Onion Powder
  • 1 tsp. Garlic Powder
  • 1/8 tsp. Sea Salt & Black Pepper, to taste
  • Preheat the oven to 400°F.
  • Chop the veggies into uniform pieces (about 1–2 inches in diameter), and place in a large bowl.
  • To the bowl, add the remainder of the ingredients, and toss to coat.
  • Line a baking sheet with parchment paper and add veggies to the sheet.
  • Bake for 30–35 minutes, until veggies are tender and golden brown on the edges.
  • Remove the vegetables from the oven and let cool slightly before serving.

Sauteed Green Beans🌐

  • 1 c. Fresh Green Beans
  • 1/2 c. Water
  • 1 tbsp. Butter
  • 1/8 tsp. Salt & Black Pepper
  • Place beans and water in a large skillet. Bring to a boil; cook covered until beans are crisp tender, 4–6 minutes. Drain and set aside the beans.
  • In the now-empty skillet, melt butter over medium-high heat. Add beans; cook and stir until beans are tender, 1–2 minutes. Sprinkle with salt and pepper.

Snacks

Oven Baked Beet Chips🌐

Total time: 90 min
Servings: 2
Equipment: Oven
  • 2 Beets, thinly sliced
  • 1 tsp. Extra Virgin Olive Oil
  • 1/8 tsp. Sea Salt
  • Cut off ends and slice beets very thin using a knife or mandolin. Place in a medium bowl and drizzle with the extra virgin olive oil and sea salt. Toss. Let sit for 30 minutes.
  • Preheat the oven to 300°F. Place the beets on a greased baking sheet and bake for 30 minutes.
  • After 30 minutes, check every 5–10 minutes and take out the beets that are curled and crisp. Total baking time will be closer to one hour, but be sure to watch them as individual beets will bake quicker than other and you don't want them to burn.

Apples and Peanut Butter🌐

  • 2 Apples, sliced
  • 8 tbsp. Creamy Peanut Butter
  • Dip the apples in the peanut butter. Enjoy!
