Banana Pancakes
Banana Pancakes
- 2 tsp. Extra Virgin Coconut Oil
- 2 Bananas
- 2 Eggs
- 1/2 c. Fresh Mixed-Berries, for garnishing
- Melt the oil in a pan.
- Blend banana and egg in a mixer until batter consistency is achieved (30 sec to 1 minute).
- Pour batter into the pan. Cook for 2–3 minutes and then flip, cooking for an additional 1–2 minutes.
- Cut strawberries in half to garnish.
