Banana Pancakes

  • 2 tsp. Extra Virgin Coconut Oil
  • 2 Bananas
  • 2 Eggs
  • 1/2 c. Fresh Mixed-Berries, for garnishing
  • Melt the oil in a pan.
  • Blend banana and egg in a mixer until batter consistency is achieved (30 sec to 1 minute).
  • Pour batter into the pan. Cook for 2–3 minutes and then flip, cooking for an additional 1–2 minutes.
  • Cut strawberries in half to garnish.
